This Keto Madeleines recipe uses a madeleine pan mould that yields gorgeous scalloped shell forms while maintaining the same buttery foundation flavor of madeleine butter cakes. Simple, spongy tea cakes with a faint cookie-like appearance are keto madeleine cookies.

Ingredients
  

  • 1 1/2 tsp vanilla extract
  • 1/4 cup granular sugar substitute
  • 1 cup chocolate baking chips, melted sugar free
  • 4 tbsp unsalted butter, melted
  • 1 tbsp coconut flour
  • 2 egg yolks
  • 1/3 cup almond flour
  • pinch salt
  • 1 egg

Instructions
 

  • Achieve a 375°F oven temperature. Melted butter should be applied with a brush to a madeleine pan.
  • Mix flours and salt(small bowl). Set apart.
  • Egg yolks and egg in a medium basin should be beaten until frothy (about 5 minutes). Vanilla extract and sweetener should be added. Beat onward until ribbons form (about 5 minutes).
  • Fold the dry ingredients into the wet ingredients.
  • Next, incorporate the melted butter into the mixture.
  • Scoop the batter into each madeleine mould. 10 minutes of baking at 375 °F.
  • Immediately after baking, turn pan over onto a tea towel to release the madeleines. Before dipping in melted chocolate chips that are keto friendly, let cookies cool on the towel.

Hints & Tips
Stop sticking! Make sure your madeleine cookie tray is well buttered and then chilled to prevent your cookies from sticking to the pan.
