INGREDIENTS NOTES:
CAULIFLOWER AND BROCCOLI FLORETS:
- We have to use the fresh florets as they have the nicest texture while frozen florets work great as well, but we just have to properly drain and thaw the florets to prevent too much moisture.
HAM:
- We have to use the cooked ham with a little fat. We can use the deli ham or leftovers for the convenience.
PARMESAN AND CHEDDAR CHEESE:
- We use parmesan and cheddar as the Parmesan provides a nutty taste, while sharp cheddar adds a strong flavor. You can use mozzarella or Gruyere as a substitute for the parmesan and cheddar.
HEAVY CREAM:
- We can use the full-fat heavy cream to make a rich, creamy sauce and it also helps to keep this grain keto-friendly.
ALMOND FLOUR OR CRUSHED PORK RINDS:
- Almond flour or crushed pork rinds make a crunchy topping without the additional carbs which makes them excellent low-carb substitutes for breadcrumbs.
SEASONING:
- We can season the gratin with the Dijon mustard and garlic as it adds depth and a little tang to the sauce.
