  • The chocolate chips are optional to use. If using, go for the dark sugar-free chocolate chips like Lily’s. You may also skip them or go for chopped dark chocolate.

COCOA POWDER

  • Always avoid the use of sweetened cocoa powder and prefer the Dutch-processed cocoa powder for a deep chocolate taste.

ALMOND MILK

  • This will keep my batter smooth and keto-friendly as the unsweetened version of almond milk is lower in carbs. You may go for the unsweetened version of the coconut milk as a second option.

ALMOND FLOUR

  • This will serve as the keto base in place of regular flour, which is high in carbs. You may go for coconut flour, but you have to reduce the amount and will need an extra egg, as coconut flour is much more absorbent than almond flour.

BUTTER

  • Use the unsalted and melted butter to add the richness. To go dairy-free, use coconut or avocado oil instead.

KETO SWEETENER

  • We use Erythritol or monkfruit sweetener to sweeten the brownie bites without adding carbs. You may also use allulose.

INSTRUCTIONS

  1. The trivet should be kept inside the Instant Pot after adding one cup of water.
  2. Apply oil to the silicone mold using a brush or spray.
  3. In a mixing bowl, combine the almond flour, salt, baking and cocoa powder.
  4. Beat the eggs, then mix melted butter, erythritol, almond milk, and vanilla essence until it becomes smooth.
  5. Now, gradually mix and fold the dry mix into the liquid mix in two or three portions.
  6. Then add chocolate chips and fold them so that they distribute evenly.
  7. Fill three-fourths of each silicone mold with the batter.
  8. Cover the opening with the mold’s lid or foil.
  9. Place the lid properly on the trivet inside the Instant Pot.
  10. For approximately fifteen minutes, place the Instant Pot in pressure cook mode after sealing it.
  11. Then wait five more minutes so it releases its pressure naturally.
  12. Next, open it to let go of the residual pressure.
  13. Shift the mold carefully from the Instant Pot to the counter.
  14. Once cooled, demold the brownie bites.
  15. Your keto Instant Pot Brownie Bites are ready to serve!

TIPS

  • Cook the brownies a little less for the fudgeier taste. They will set upon cooling.
  • Cover the opening of the mold to prevent any condensation water from entering the bites.
  • Never overmix the batter, so that your bites will stay soft.

HOW TO STORE THE LEFTOVERS

CHILLING

  • Once your brownie bites have cooled down, save them in a container secured with an airtight lid. Refrigerate it for around five days.

FREEZING

  • Arrange the cooled bites in a single layer and freeze them. Transfer the solid bites to the freezer-safe bag. Now they are ready to freeze for around two months.
