These Keto Air Fryer Scones are delicious. This recipe is made with almond & coconut flour, keto-friendly sweetener & milk, and butter instead of self-rising flour, sugar, and normal milk, which is perfect to have in the keto diet. These Keto Air Fryer Scones only contain 4.5g fiber, & 3.75g net carbs in them. We can easily make these scones and store them for one month in the freezer. The nice quality of this recipe is that these scones are gluten-free & grain-free. It contains dairy because of butter but we can substitute the butter with coconut oil to make this dairy-free.

INGREDIENTS:

  • 200g almond flour
  • 50g coconut flour
  • 80 g unsalted chill cubes of butter
  • Half cup unsweetened almond milk
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • Optional: Sweetener to taste

INGREDIENTS NOTES:

ALMOND FLOUR:

  • I use almond flour to make these scones as a substitute for self-rising flour because it is low in carbs and good to have in the keto diet.

COCONUT FLOUR:

  • I use a small amount of coconut flour to give the texture and do not add the coconut flour without measurement as it makes the scones dry.

UNSALTED BUTTER:

  • I use unsalted and chilled cubes of butter to make these scones, the cubes should be chilled otherwise we will not achieve the same texture.

ALMOND MILK:

  • I use almond milk as a substitute for whole milk and it should be unsweetened.

BAKING POWDER:

  • I use baking powder to make these scones so they can rise well.

SALT:

  • I add small quantity of salt to balance the taste of these scones.

SWEETENER:

  • If you want to make the sweet scones then we can add the sweetener according to the taste.

INSTRUCTION:

  1. Take a large mixing bowl and add the salt, coconut & almond flour, & baking powder.
  2. Mix the dry ingredients properly.
  3. Add the chill cubes of butter to the dry ingredients and cut the butter in the dry batter till the mixture appears crumbly.
  4. Then slowly add the milk and sweetener (if you are making them sweet) and form the dough using hands.
  5. Place the silicon mat and dust the almond flour on the mat.
  6. Then smooth the dough roll into one-inch thickness and divide into 8 pieces.
  7. Heat the air fryer at 320 degrees F for 3 minutes.
  8. Put the scones in the basket in a single layer and air fry them till they get golden brown and firm.
  9. When the scones get ready, take them out cool them for some time, and serve.

TIPS:

  • We can include the additional ½ tsp. Baking powder to make these scones extra fluffy.
  • You can also include some fresh berries, lemon zest, or vanilla extract to alter the taste.

  • Put these scones in the seal box and keep them for 3 to 4 days.

FREEZER:

  • We can cover these scones with the wrap and then put them in the box and keep them for one month.
