All these items deliver you a low-carb, healthy, and nutritious salad with a nutty crunch. Keto Ambrosia Salad doesn’t require any cooking. You just have to do the ten-minute prep & the rest of the work will be done by the refrigerator. You can enjoy this salad hassle-free.

    INGREDIENT NOTES:

    SOUR CREAM:

    • This sour cream will add a creamy, sour touch without increasing the carbs. You may replace it with the full-fat version of Greek yogurt.

    WHIPPING CREAM:

    • Please avoid using commercially whipped toppings as they may contain excess carbs. Whip the cream by yourself at home to have a creamy and fluffy base for the salad.

    COCONUT:

    • We will require the unsweetened version of shredded coconut to have the classic tropical flavor without carbs.

    SWEETENER:

    • We will require the keto sweetener to sweeten our salad without sugar. We are using the powdered version of erythritol. While you may choose any one of the Allulose, stevia, or monk fruit. Be careful to adjust the amount of the sweetener you will use as per its sweetening capacity.

    MARSHMALLOWS:

    • Here, the sugar-free version of mini-sized marshmallows will work best. These low-carb version of marshmallows is produced by Lily’s/ChocZero brand.

    BERRIES:

    • We are using a mix of strawberries & raspberries/blackberries. As berries are naturally low in carbs so they will be perfect for this keto salad.

    ESSENCE OF VANILLA:

    • Always buy the pure essence of vanilla that adds the depth & completes the flavor profile.

    NUTS:

    • The addition of nuts will make your salad crunchy. You may substitute the almonds/macadamia nuts in place of walnuts/pecans. They will give you crunch as well as taste.

    INSTRUCTIONS:

    1. Include the whipping cream(heavy), erythritol, & essence of vanilla in a mixing bowl(chilled).
    2. Use an electric mixer to whip on normal full speed till the formation of stiff peaks.
    3. Now include the sour cream & fold with your gentle hands.
    4. When combined, add the coconut, & nuts and mix thoroughly.
    5. Now, add the berries & fold them very carefully to mix them properly without mashing them.
    6. At last, mix the mini marshmallows(sugar-free) & zest of lemon.
    7. Chill this ambrosia salad for around an hour.
    8. After that, use the ramekins/dessert bowl(small) to serve this keto Ambrosia Salad.

    TIPS:

    • We also stir some cocoa nibs in this salad for the chocolate flavor.
    • You must stop whipping as soon as the stiff peaks form; otherwise, your cream will become grainy.
    • Harsh mixing the salad will deflate the whipped cream. You need to use the silicone spatula & be gentle while folding the salad items in the cream mixture.
    • We advise you to use the chilled items for making the salad base, as you will get the preferred consistency of whipped cream in less time.
    • Add nuts right before serving to have more crunch.

    HOW TO PRESERVE(LEFTOVERS):

    CHILLING:

    • Save the ambrosia salad(leftover) in a storage container(tightly sealed). It can be consumed within three days while refrigerated. You need to mix it again right before serving. We advise you to serve it fresh or as soon as it is combined.

    FREEZING:

    • We never recommend you to freeze the combined salad as it will become watery upon defrosting.
      If you still need to freeze, you may pack each item using the separate containers. Still expect the texture change upon derosting & assembling.

    FAQs:

    Will the whipped topping work in place of the original whipped cream?

    • We do not recommend you to use whipped topping as they surely contain additional carbs along with hydrogenated vegetable oil. Therefore, they are not suitable for the keto recipes.

    Are these sugar-free marshmallows suitable for keto?

    • Check the label for the presence of keto sweeteners while buying the marshmallows. Those marshmallows will be suitable for keto.

    Will cream cheese work in place of sour cream?

    • If you want a comparatively thick texture, then cream cheese will be the perfect substitute. But it will require a little heavy cream to balance the consistency.
