WHITES OF EGG:

  • Make sure that egg whites are at a normal surrounding temperature for better whipping, which results in maximum volume. Also, be careful to have no trace of yolk.

PROTEIN POWDER:

  • We need the protein powder in gluten-free recipes to give our cookies the same texture as gluten-containing can. You may use the whey protein isolate(unflavored)/egg white protein powder.

CREAM OF TARTAR:

ESSENCE:

INSTRUCTIONS:

  1. Warm up the oven at 150 degrees C & get to work.
  2. Cover a baking sheet/tray using the sheet of parchment.

  4. Beat them using an electric mixer at normal-full speed till they become foamy.
  5. Include the salt & cream of tartar in the foamy whites & then whip again till the formation of soft peaks.
  6. Stop the mixer & include a teaspoon of powdered sweetener, then beat again.
  7. Repeat the above point till all the sweetener is incorporated in the mixture.
  8. Whip till you get the stiff peaks & glossy mixture.
  9. At that moment, mix the essence of vanilla & almond with gentle hands.
  10. Include while sifting the baking powder, flour of coconut,& protein powder in a bowl(separate).
  11. Mix well & then add half of the solid mix to the meringue.
  12. Fold very gently with the meringue so that it doesn’t deflate.
  13. Similarly, add the other half of the dry mix.
  14. Now your cookie batter is ready.
  15. Grab a cookie scoop and drop the batter onto the baking tray/sheet(lined) at a particular distance.
  16. Shift the baking sheet/tray to the oven till you observe them light golden & stable to touch.
  17. It may take around 22 to 25 mins in the oven.
  18. Then remove the tray from the oven & leave it at the counter for ~five mins.
  19. After that, shift the cookies to the rack to cool completely.

TIPS:

  • While mixing the dry ingredients, always mix with soft and gentle hands. Otherwise, meringue will lose its fluffiness.
  • Sprinkle the keto sweetener(powdered), if you like them sweeter.
  • Erytritol will give you the crisper cookies while allulose will provide you with the chewy cookies. Go for the one whichever results you like.
