Keto Artichoke Stuffed Mushrooms is a simple dish. We require only half an hour to make this delicious dish. They are perfect to prepare for last-minute parties in which you don’t have plenty of time for preparation. This recipe features the combination of cream cheese, cheese, and seasonings to make the filling, which we stuff in the mushrooms to bake them. INGREDIENTS:

  • 1 cup canned artichoke hearts
  • 3 oz. cream cheese

MUSHROOMS:

  • Use the white or cremini mushrooms to stuff them. They are able to hold the shape nicely. Take the wide cap mushrooms so it gets stuff easily. We just clean the mushrooms with wet cloth instead of rinsing with water.

ARTICHOKES:

  • Use the jar or can of artichokes to prepare this filling. Both of them work fine. Drain all the additional water to prevent the filling from getting a watery consistency. Make the small pieces so they mix evenly.

CREAM CHEESE:

  • Soft cream cheese mixes easily without forming lumps. It makes the creamy filling. Use the full-fat variety in order to keep the recipe keto.

MOZZARELLA AND PARMESAN CHEESE:

  • Mozzarella & Parmesan cheese add a stretchy quality and sharp flavor. Use Asiago instead of provolone to add the robust flavor.

GARLIC & HERBS:

  • Garlic & herbs provide the deep flavor and aroma in the dish. Parsley provides a slight freshness that helps to balance the cheese. Use the basil or chives instead.

INSTRUCTIONS:

  1. We heat the oven to 375 degrees F.
  2. Put the parchment paper in the tray,
  3. Apply the oil on the mushroom caps with a brush.
  4. Mix the paprika, artichokes, onion powder, cream cheese, garlic, salt, mozzarella, parsley, Parmesan, & pepper in a dish.
  5. Add the mixture to the mushroom caps.
  6. Bake these stuffed mushrooms for 18-20 minutes or till the top part gets golden & tender.
  7. Now we cool the mushrooms for some time and serve.
