INGREDIENT NOTES:
SWEETENER(KETO):
- The recipe will include the brown keto sweetener in its powdered version of either the Swerve/Lakanto brand to mimic the traditional crust. Whereas, a normal white powdered keto sweetener will be used for the layer of cheesecake.
SPICES:
- The spices we have used here are cinnamon, nutmeg, & ginger. When combined, they will give you the closest flavor of biscoff cookies.
ALMOND FLOUR:
- This is the keto version that combines with brown keto sweetener to give you the closest feel of a graham cracker/cookie base that is the signature of regular cheesecakes. You may go for pecan flour instead of almond, or use the keto cookies(crushed).
CREAM(HEAVY):
- Using heavy cream along with cream cheese doubles the volume without making it too heavy. You may go for cream of coconut/Greek yogurt instead of cream(heavy).
CHEESE(CREAM):
- This is the base of every cheesecake, but if we use whole cream cheese, then it will increase the calorie count. So we have used the heavy cream along with it, which will make it light.

INSTRUCTIONS:
- Include brown erythritol, nutmeg, flour of almond, ginger, & cinnamon in a bowl.
- After mixing the solid items, include the melted butter.
- Mix them well till the mixture resembles wet sand.
- Your crust mixture is ready to assemble.
- Divide the mixture of crust equally between the total serving jars/cups.
- It should be ~two tbsps/cup. Press it to have a smooth surface.
