CARROT CAKE:

  • A tsp of allspice
  • 1/4 cup of keto sweetener (erythritol/swerve)
  • One-fourth cup of oil (avocado/coconut)
  • Powder of stevia extract, 1/4 tsp
  • A quarter cup of milk (almond)
  • 1/2 cup of coconut flour
  • Baking powder, 1/2 teaspoon
  • Three-fourth cups of carrots

FILLING:

  • Half tsp of vanilla essence
  • Cream cheese, 8 oz
  • 1/4 teaspoon of powdered stevia extract
  • Egg, one
  • Powdered keto sweetener (swerve, erythritol), 1/4 cup
  • A tablespoon . of coconut flour

INGREDIENT NOTES:

FLOUR:
This recipe uses a combo of flours (almond & coconut). These flours have got us the gluten- & sugar-free cake. If you have a nut allergy, then use a cup of only coconut flour in place of 1/2 cup almond + 1/2 cup coconut flour

CARROT:
As you know, carrots are high in carbs, but that is not the issue. Our recipe requires a small amount of carrots. This is why the net carbs will not increase.

CREAM OF TARTAR & BAKING POWDER:
They smooth the fluffy texture & prevent the cake from going flat. Baking powder also contains the cream of tartar. We include extra cream of tartar along with baking powder. That helps better rise to our baked goods.

SWEETENER:
Use the powdered keto sweetener as per your choice. It might be a swerve, erythritol, or keto substitute for brown sugar. That makes our cake sweet without adding carbs.

OIL:
Never use oil of olive that is extra virgin, as it disturbs the fragrance & taste of the cake. Thus, we recommend using a light version of oil (olives, coconut, or avocado) or butter.

EGGS:
Use the same amount of eggs as mentioned in this recipe. Otherwise, you will not get your required results.
If you are using coconut flour, then you have to increase the amount of eggs as well.

INSTRUCTIONS:

FILLING:

  1. Put a big vessel on your kitchen counter.
  2. Include the items listed above to make the filling.
  3. Beat them well, & your filling is ready.

CARROT MUFFINS:

  1. Switch the oven on to heat it to 350 F.
  2. Apply oil to the dozen of muffin pans.
  3. Arrange a large container on your work surface.
  4. Include egg whites & cream of tartar in that vessel.
  5. Beat them using an electric beater (hand/stand) at full speed.
  6. Stop the beater once you see the formation of stiff peaks.
  7. Pick another vessel & add the rest of the items in it.
  8. Mix well until combined, & don’t overbeat.
  9. Now mix in the beaten egg white & pecans and fold gently.
  10. The batter carrot cake is ready to divide into the twelve-muffin pan.
  11. Make a cavity using a spoon & add 2 overfilled teaspoons in that space.
  12. Insert into the oven for baking for 22 or 25 minutes.
  13. Wait for the muffins to bake.
  14. After that, allow them to come to the surrounding temperature.

  2. For this purpose, use either heavy cream + water, hemp milk, or almond milk.
