This paratha is made with grated cauliflower, almond flour, & coconut flour, and it is flavorful and nourishing. INGREDIENTS:

  • 1 medium cauliflower head
  • ½ cup almond flour
  • Two tbsp. coconut flour
  • One tbsp. psyllium husk
  • 1 teaspoon cumin seeds
  • 1 tsp. ginger paste
  • 1 green chili
  • 1 tbsp. fresh coriander
  • Salt
  • Ghee or oil

INGREDIENTS NOTES:

CAULIFLOWER:

  • You can either grind or process fresh cauliflower into rice-sized chunks. We have to properly squeeze out all the liquid from the cauliflower before cooking to prevent the dough from getting wet. We can also use the store-bought cauliflower rice.

ALMOND FLOUR:

  • Almond flour is a low-carb, gluten-free flour that gives the dough structure and a hint of nutty taste. It’s necessary to get the paratha’s keto-friendly texture.

COCONUT FLOUR:

  • Coconut Flour is extremely absorbent flour that gives the dough a slightly softer feel by binding it together. We have to add this coconut flour very carefully because too much of it can dry up the dough.

PSYLLIUM HUSK:

  • We should have to use the psyllium husk to improve the dough consistency & additional fiber. It enhances the paratha’s binding qualities and texture.

GHEE OR OIL:

  • Ghee or Oil is used to fry the paratha; ghee offers a rich flavor and is traditionally used in Indian cookery. You can use coconut oil or olive oil in its place if you’d rather not have dairy.

ADD-INS:

INSTRUCTION:

  1. We can grate the cauliflower, and we can microwave the cauliflower rice for three to four minutes to make it soft.
  2. When the cauliflower has cooled down, we can use the cheesecloth to wring out any extra moisture.
  3. We can add the squeezed cauliflower to the bowl.
  4. Add the almond flour, psyllium husk, coconut flour, cumin seeds, minced chili, ginger paste, coriander, salt, and cauliflower in a bowl.
