INSTRUCTIONS:

  1. Wash the vegetables and chop them nicely on the cutting board.
  2. Heat the Olive Oil in the pan, then Saute Celery, Garlic, and onion one by one till they all change their color and become fragrant.
  3. Place a lid after adding vegetable broth. Wait until simmer. Cook on low flame for a5 mins.
  4. Then turn the flame off and leave it to cool a little. To make the soup smooth, mix the vegetables using an immersion blender.
  5. Then add the coconut milk.
  6. Add Black Pepper and salt as per your taste.
  7. You can Garnish it with Parsley and shredded Parmesan cheese.
