INSTRUCTIONS:

  1. Set oven temperature to 375°F.
  2. Heat the oil in a big skillet on the heat (medium) till it sparkles.
  3. Include the thighs of chicken in the pan & place in a single layer after seasoning them with salt and pepper.
  4. Fry it for 2-3 mints on a side and flip it to fry another side for same time.
  5. Place the chicken in a pan of glass (baking) or casserole dish (medium) in a single layer.
  6. Place a piece of fresh mozzarella on top of each chicken thigh, followed by a tomato slice.
  7. Bake the casserole for twenty-five to twenty-eight minutes or until the chicken is cooked completely and the cheese is melted and bubbling.
