    INGREDIENTS:

    • 1.5 lbs. without bone & skin chicken breasts
    • 6 cups chicken broth
    • 2 cloves garlic
    • Two celery stalks
    • One tsp. dried thyme
    • ½ tsp. rosemary
    • ½ tsp. turmeric
    • Half onion
    • Salt and pepper
    • 1 tbsp. olive oil or butter
    • 8 oz. Shirataki noodles

    INGREDIENTS NOTES:

    CHICKEN FILLET:

    • We can use the chicken fillet without the bone and skin of the thigh or breast but we have to adjust the cooking time accordingly as the breast is leaner and is ready in less time.

    SHIRATAKI NOODLES:

    • The Shirataki noodles are made with the konjac root and they are minimal in calories and almost completely carb-free. We have to properly rinse and dry these noodles and saute them before adding them to the crock pot to remove the inherent smell.

    ZOODLES:

    • These zoodles or zucchini noodles are good vegetable-based noodle alternative to traditional pasta. We can add the noodles several minutes before the end of cooking time to prevent the noodles from becoming mushy.

    CHICKEN BROTH:

    • We have to use the best quality chicken broth with less salt to make a rich and delicious base and manage the salt as we like.

    CELERY:

    • We add the celery in the chicken soup as it makes the soup tastier without the additional carbs and we have to avoid the carrots to keep the dish keto-friendly as it increases the carb content

    SEASONING:

    • We can add garlic, turmeric, thyme & rosemary to make the dish tasty as well as aromatic and turmeric is not only anti-inflammatory but also gives the golden hue.

    CREAM CHEESE:

    • This is optional but we can also add a full spoon of cream cheese or heavy cream to make the rich noodles.

    INSTRUCTION:

    1. We can apply a thin layer of butter or olive oil in the crockpot.
    2. Now we can add the broth, turmeric, chicken, thyme, onion, salt, rosemary, garlic, black pepper, & celery in the crock pot.
    3. We can close the lid of the crock pot and simmer for about 4–6 hours on low flame or 2.5–3 hours on high till the chicken gets cooked.
    4. When the chicken gets done we can put the chicken in the plate and shred the chicken with the forks.
    5. We can add the zucchini and the rinsed Shirataki noodles to the crock pot.
    6. Cook them for a further 10 to 15 minutes on high flame.
    7. Now we can adjust the seasoning as required and serve warm.

    TIPS:

    • You have to rinse the Shirataki noodles properly and pan-fry them for two minutes to get rid of any odor before adding them to the crock pot.
    • We can squeeze some lemon juice into the noodles for an additional taste.

    • We can transfer the leftover noodles to the closed box and store the noodles for 4 days.

    FREEZER:

    • We have to freeze this dish for 2 months without the noodles and add the noodles when required.
