Keto Cinnamon Puff Pastry

Keto Cinnamon Puff Pastry is the low-carb version of the Cinnamon Puff Pastry. It has beautiful layers just like the Traditional Cinnamon rolls. The Pastry Dough is soft and moist with the presence of butter and cream. You can enjoy the taste of traditional Cinnamon rolls without being worried about carbs. You can freeze them after assembling and cutting them or bake them immediately as you wish.

EQUIPMENT:

  • Oven 1
  • A large Mixing Bowl.
  • 2 medium-sized bowls.

INGREDIENTS:

FOR MAKING PUFF PASTRY DOUGH:

  • 7 grams of Coconut Flour
  • Half a cup of Almond Flour, around 56 grams
  • 1/2 teaspoon of Xanthum Gum
  • 40 g of Vital Wheat Gluten, about 1/4 cup.
  • 1.5 tsp of Baking Powder
  • 14 grams of Psyllium Husks, 2 Tbsp.
  • Heavy Cream, 1/3 cup & 2 Tablespoons
  • One-eighth tsp of Salt
  • Half cup + 1 tsp of Salted, and grated Butter, Cold.
  • 1/4 cup of Sweetener (erythritol or Monkfruit), Powdered.

CINNAMON FILLING:

  • 1 Tablespoon powder of Cinnamon
  • One-fourth Cup of Softened Butter, Salted
  • 48 grams of Sweetener, Sunkin Brown

WHITE GLAZE:

  • 15 g of cream Cheese, Softened.
  • One-fourth cup of Monkfruit Sweetener, Powdered.
  • Heavy Cream, 2-4 tablespoons or As Required.

INSTRUCTIONS:

PUFF PASTRY:

  1. Take a big Bowl. Add all the dry ingredients of the Puff pastry we have listed above and combine them well.
  2. Now we have to add the chunks of Butter and mash them with the spoon to make them smaller or you can grate the butter for your convenience.
  3. Now, add whipping cream and make the pastry dough with your hands. If you still find the dough somewhat dry then you can add more cream to minimize the dough’s dryness but not to add too much of the cream.
  4. Now take two parchment sheets apply a little oil on them and then dust them with coconut flour. Make sure to dust the dough with the coconut flour as well.
  5. Now place the Dough between these parchment sheets and spread it with the rolling pin as you can.
  6. Now remove the upper sheet of parchment and fold the edges of the pastry dough inwards then rotate it 90 degrees. then again place that sheet and roll again.
  7. Do the same process again and again till your butter is well incorporated in the pastry Dough.
  8. Now again roll the dough, cover it in the Plastic Wrap, and freeze for about 1/2 of an hour.

FILLING OF CINNAMON:

  1. Take Cinnamon powder, softened butter, and powdered sweetener in the Vessel while our Pastry Dough is freezing.
  2. Combine all the ingredients till a creamy and smooth Cinnamon filling comes out.

ASSEMBLING AND BAKING:

  1. As soon as our pastry dough has been frozen for about 1/2 of an hour. Then take it out.
  2. Set your Oven to 375 degrees Fahrenheit before start Assembling the Cinnamon Pastry Rolls.
  3. Again Roll the Pastry dough between parchment sheets. Roll as thin as you can Handle it without tearing.
  4. Then Spread the low-carb Cinnamon Filling on the whole pastry dough and start it rolling in its length.
  5. Cut 2-inch pieces from that big Cinnamon Puff Pastry.
  6. Place the Puff Pastry’s cut side up on the Baking Pan.
  7. Insert the Baking Pan into the Oven and set the timer to about 20 minutes or until you see the required Golden Brown colour.

MAKING GLAZE:

  1. Here we start working to make Glaze while Our Cinnamon Puff Pastry is in the oven.
  2. Combine all the ingredients of the Glaze in a bowl and mix it well. Your Glaze is ready.
  3. Add more of the cream if you need to dilute the glaze
  4. Once Our Cinnamon Puff Pastry Rolls are baked then wait for them to Cool.
  5. Now drizzle them with the White Glaze that we have made and our Keto Cinnamon Puff Pastries are ready to serve!

TIPS:

  • You can’t let your butter melt so place the dough in the freezer for some time in between the rolling and kneading Processes.
  • Butter in the Cinnamon filling should also not be Melted because it will be too difficult to handle while rolling the pastry Dough and cutting its pieces if you are working with the melted Butter

STORAGE INSTRUCTIONS:

  • FREEZE: If you freeze them before baking then you have to bake them for some extra minutes.
    If you are planning to freeze them after baking then immediately wrap them in wax paper just after they come to normal temperature and place them in the air-tight container to freeze them.
  • FRIDGE: It is recommended to place them in the Fridge for a day if needed only by properly covering them.
  • REHEAT it in the Oven or Microwave it until it becomes warm.

What do we use If we don’t have Psyllium Husk Available?
If you are out of Psyllium Husks then You can use Oat Fiber in its place.

What should be substituted if Sukrin Sweetener is not available?
If you don’t have Sukrin Sweetener then you can opt for Swerve Brown Sweetener or you can use Blackstrap molasses in white low-carb sweetener for the brown Sugar
