INGREDIENTS:

  • Fresh/frozen strawberries, 6 oz
  • 1.5 cups of flour of almond
  • Almond/coconut milk (unsweetened), 1/2 cup
  • 0.5 cup of coconut flour
  • Big eggs, 6
  • Half cup of brown sugar substitute
  • 1/4 cup of melted butter (unsalted)
  • Low-carb sweetener, 1/4 cup
  • A quarter tsp of nutmeg (ground)
  • 1/2 teaspoon of xantham gum
  • One tablespoon of orange peel
  • 0.5 teaspoon of salt
  • Baking powder, 1.5 teaspoons
  • Powdered cinnamon, half tsp
  • 0.5 tsp of baking soda

INSTRUCTION:

  1. Heat the empty oven to 325 F.
  2. Pick a loaf pan (9 by 5 inches) & apply oil to it.
  3. You can also cover it by spreading the parchment paper.
  4. Place a normal-sized vessel over the kitchen shelf.
  5. Include all the dry items in that vessel & mix them well.
  6. Pick another big vessel & mix all the liquid items in that vessel.
  7. Include the mix of dry items with the mix of liquid items & fold in a gentle way.
  8. If you find the batter thick, then include the minute amount of water.
  9. Mix it well & check if you see the need for more water.
  10. Include the walnuts & cranberries & give it a good mix.
  11. Now, shift the batter to the loaf pan that you have already greased.
  12. Shift the loaf pan to the oven (heated) & bake till the bread gets ready.
  13. Check the bread after an hour; if it becomes firm and solid, that means the bread is ready.
  14. Allow the bread to cool somewhat after taking the loaf.

  15. After 0.5 hr, run the knife (sharp) around the edges.
  16. Turn the loaf pan upside down over the wired rack and let it come to the regular temperature.

 

TIPS:

We have to use the pans of glass/ceramic as the metal pan reacts with the acidic nature of cranberries. These glass/ceramic pans conduct heat slowly. If you bake it on high, then your edges & top will burn till it gets ready from inside.
That is why, to avoid this mess, bake it at a low temperature.

Yes. If using a smaller loaf pan, then you have to increase the baking time as compared to the large loaf pan.

When will be the best time to remove bread from the loaf pan?
We have experienced that there is a point between 0.5 hr & one hour. After this point, the bread starts sticking again to the pan. You must have to remove it between this time.

Are cranberries healthy for us?
Fresh/frozen cranberries are the super low-carb fruits on the list of keto fruits. You might use it without worrying about anything. But dried ones contain more carbs. So, use them with care. Other nutrients, like fiber & antioxidants, are rich in these berries.
