SWEETENERS:

  • We are using the keto sweetener to sweeten the filling without increasing the carbs. The powdered version will be best to avoid the grainy texture.
  • We are using the erythritol here. You may also go for pure stevia, stevia-erythritol blend, monk fruit-erythritol blend, or allulose. They also work best, you only need to adjust the amount as each sweetener has different sweetness.

CREAM CHEESE:

  • We will get the creamy richness in the filling by using cream cheese(full-fat). Vegan cream cheese or mascarpone cream cheese also works best.

MOZZARELLA CHEESE:

  • It is the key ingredient of the fat head dough, which gives pliability to our keto dough, in which gluten-based binders are not available. Freshly grated mozzarella, which should be low-moisture & part-skim skim will give you the best results.
    You may swap provolone/cheddar cheese with mozzarella, but the results will not be the same.

ALMOND FLOUR:

  • Finely ground flour of skinless almonds will be best to give our dough the proper texture. Go for the flour of sunflower seeds if you are allergic to nuts.

DIRECTIONS:

PREP FOR THE DOUGH:

  1. Operate an empty oven at 175 degrees C, then start your work.
  2. Line an oven sheet with parchment paper to have it ready.
  3. Include the mozzarella cheese(grated) & cream cheese(softened) in a bowl(microwave-safe).
  4. Keep the bowl inside the microwave & run it till both cheeses melt properly.
  5. You must pause every thirty seconds & mix the cheese using a spoon/spatula. Otherwise, your cheese will burn.
  6. Once you have melted the cheeses, include baking powder, almond flour, & an egg.
  7. Mix them to combine them properly till the dough(sticky) forms.
  8. Spread the ball of dough between the two layers of parchment paper.
  9. The thickness of the dough should be 0.25 inches on every side.
  10. Pick a pizza cutter/knife to cut it into eight triangles.
  11. Now, include the sweetener, vanilla essence, & cream cheese(softened) in a bowl.

  13. Use a tablespoon to dollop the filling at each wider end of the triangle.
  14. Start rolling from the wider end til the narrow end.
  15. Pinch seal the ends & make a slight curve to give them the shape of crescents.

  18. Insert the baking sheet with ready-to-bake crescent danishes inside the oven(preheated).

TIPS:
