This Keto Easter Egg Cake is delicate and has free-from-sugar cake layers topped with a rich, robin’s egg blue frosting. You can even use tiny keto Easter eggs to adorn it! I have been craving to make this robin cake for a long time, and Easter is a perfect occasion to make this Keto Easter Egg Cake. I make eggs to decorate the cake from keto marzipan molded into an egg shape. This cake is also low in carbs with just 5.6g of carbs, 2.3g of fiber, and 3.3g of net carbs in the cake.

INGREDIENTS:
CAKE:
- 2 cups almond flour
- 1/3 cup coconut flour
- 1/3 cup unflavored whey powder
- 1tbsp. baking powder
- ½ cup soft butter
- ¾ cup granulated swerve
- Five large egg whites
- 1 tsp. extract of almond
- 1 tsp. extract of vanilla
- 2/3 cup water
- ½ tsp. salt
FROSTING:
- 6 ounces of cream cheese (softened)
- ½ cup butter (softened)
- 1 cup powdered swerve sweetener
- 1 tsp. extract of almond
- 1 tsp. extract of vanilla
- Whipping cream
- Blue food coloring (natural)
SPECKLES AND OTHER GARNISH:
- ½ tsp. cocoa powder
- 1 ½ tsp. water
- 3 tbsp. toasted coconut
- 3 free sugar marzipan eggs

FLOUR:
- We use a combination of flour (almond) and flour (coconut) to make this keto Easter cake.
WHEY POWDER:
- I use unflavored whey powder to make this cake; do not buy any flavor or sweetened version to make this cake.
- Always check the label to see if it is keto-friendly or not.
- We can powder of egg white protein in place of powder of whey protein.
SWEETENER:
- Swerve granular is used to make the cake and powdered swerve is used to prepare its frosting for the cake.
EXTRACT:
- Extract almond and extract of vanilla to enrich the flavor of this Easter cake.
COCOA POWDER:
- Cocoa powder is mixed with water and used to decorate this Easter cake.
COCONUTS:
- You can buy coconut flakes from the store to decorate the cake or make your own at home.
MARZIPAN EGGS:
- Marzipan eggs are made with keto marzipan by molding them into the egg’s shape instead of buying it from the store, which is not keto-friendly.

INSTRUCTION:
CAKE:
- Heat the oven to three-fifty degrees F.
- Brush the 2 8-inches round pan with oil and put the paper (parchment) in the pan.
- Take a bowl (medium) and add flour (coconut), whey protein, salt, baking powder, and flour (almond).
- Mix the entire dry item with the whisk.
- Take a bowl (large), include the butter and sweetener, and beat it till it gets white, soft, and frothy.
- Then include the egg whites with extract of almond and vanilla and beat it till it gets properly mixed.
- Transfer the flour (almond) mixture of cake in the two prepared round pan equally.
- Tap the pan to remove the bubble in the mixture and bake it for twenty to twenty-five minutes.
- When it is done; cool the cake.
- Lose the sides of the pan with the knife and put the cake on the cooling rack to further cool down.
- Take out the paper (parchment) from the cake.
FROSTING:
- Take a bowl (large) and add the cream cheese and butter till it gets smooth.
- Add ¾ cup of powdered swerve, extract of almond and vanilla in the mixture add the blue color, and beat it again.
- In the second bowl, add ¾ cup of cream with powdered swerve and beat it till soft peaks form.
- Mix the whipped cream mixture with the cream cheese till well combined.
ASSEMBLY:
- Take a cake plate and put the cake layer on it.
- Apply about 1/3rd of the frosting on the cake layer and spread it till the edges evenly.
- Put aside two tbsp. of the frosting to make the nest.
- Put another layer of cake and apply the remaining frosting and even the frosted sides of the cake.
- Take a small bowl adds water and cocoa powder and makes slurry.
- Take the clean paintbrush and decorate the cake from top and its sides.
- Utilize the save frosting to make the nest over the cake and cover it with coconut.
- Put the marzipan eggs in the nest.
TIPS:
- Cover the cake stand with a paper towel or plastic wrap so the slurry will not untidy the stand and kitchen.
- Toast your coconut till it gets a nice brown color for its resemblance to a nest.
STORAGE INFORMATION:

- Tightly wrap the cake and stock it up for two weeks.
FREEZER:
- Put the cake in the container and stock it up for four months.
