This Keto Green Chicken Roast is very healthy, delicious, and tasty. This roasted chicken is a protein-rich meal that makes the muscles and is also low in carbs. This green chicken provides healthy fats which is good for heart health. Its green sauce is loaded with antioxidants & vitamin C which will support our immune system. This dish is prepared within just one hour and ten minutes. this green chicken roast is prepared with simple components that are easily available in the store or the pantry.   • One tbsp. white vinegar
  • A tsp. cumin powder
  • One tsp. chili powder
  • Salt

INGREDIENTS NOTES:

CHICKEN:

  • We can utilize whole chicken or parts of chicken like chicken breast or chicken thigh or legs are also work perfectly to make this recipe.

HERBS:

  • I utilize fresh herbs like cilantro, parsley, & mint to make the marination; do not utilize dried herbs to make this because it will not taste the same.

GARLIC:

  • Always go for fresh garlic to make this recipe; it makes it aromatic as well as flavorful; garlic powder does not work to make this recipe.

JALAPENOS:

  • Use jalapenos to enhance the spiciness of the dish; you can adjust the amount of jalapenos according to your tolerance level of spiciness.

WHITE VINEGAR:

  • Using white vinegar in this dish can help the chicken to get tender as well as help to balance the taste.

OLIVE OIL:

  • Include olive oil to make the marinade to enhance the smoothness of the dish.

CUMIN & CHILI POWDER:

  • Use Cumin & chili powder as a seasoning to make this recipe; you can add them according to the taste.

INSTRUCTION:

  1. Heat the oven to 425 degrees F.
  2. Properly dry the chicken by using a paper towel.
  3. Take a blender and add the jalapenos, cilantro, parsley, mint leaves, garlic pieces, white vinegar, lime juice, salt & cumin.
  4. Grind them well to make a marination.
  5. Then take a bowl & transfer the sauce in the bowl and immerse the chicken in it and marinate for at least three to four hours, we can also marinate it for the whole night to get the maximum flavor in the chicken & put it in the fridge.
  6. When the chicken gets marinated well then put the chicken on the shelf for 30 minutes to come the chicken at ambient temperature.
  7. Put the chicken in the roasting pan and roast the chicken for one hour or till the internal temperature of the chicken is one-sixty-five degrees F.
  8. When the chicken is done take it out and put it in the corner for 10 minutes.
  9. Garnish the chicken with slices of onions, mint leaves & lemon juice.

SERVING IDEAS:

  • Make some healthy & your favorite salads like cucumber & feta salad, avocado salad, and Arugula salad with lemon dressing which pairs wonderfully with this green roast.
  • You can also serve this simply just with round sliced onions & some mint leaves.

TIPS:

  • We can bake the chicken at a high temperature of around 450 degrees F in the last ten minutes to make it crispier.
  • If we want to have the juiciest chicken then put it in the corner for ten minutes when it gets ready.
  • If you want to have the more flavorful, juicy, & tender chicken then marinate for the whole night or 6-8 hours.
