MATCHA POWDER:

  • Always opt for culinary or ceremonial-grade, premium-quality matcha powder for maximum flavor and vivid color.

SOUR CREAM:

  • Using sour cream in the filling will give a delicious, tangy flavor to it. You may use cream of coconut/yogurt(Greek) as a replacement for cream(sour).

ALMOND FLOUR:

  • Use the well-ground flour of skinless almonds to have a smooth crust base. You may swap it with walnut powder or flour of pecan for a flavor twist.

FLOUR OF COCONUT:

  • Since it is not a compulsory item, adding it will give you a firmer filling. You may use the flour of almonds in the filling to replace the flour of coconut, or entirely skip the flour.

SWEETENER(KETO):

  • You may use the grainy sweetener in the crust, but always go for the powdered version for the filling to have a silky smooth texture. Here, we have used the Erythritol, but you may go for any one of the stevia blends, monk fruit, or allulose if you don’t have the erythritol available.

CREAM CHEESE:

  • Avoid the use of spreadable cream cheese in this filling, as, block of full-fat cream cheese works best. Use vegan cream cheese to have the non-dairy version.

INSTRUCTIONS:

CRUST:

  1. Set the oven(empty) at 160 degrees C & begin working.
  2. Cover the base of the springform pan(9-inch) using paper of parchment.
  3. Include the butter(melted), salt, flour(almond), vanilla essence, and sweetener in a normal-sized bowl.
  4. Mix well till it resembles wet sand.
  5. Now, transfer it into the pan(springform) & press it to have a level surface of crust.
  6. Shift it to the oven for ~ten minutes.
  7. Place it away to cool once the baking finishes.

FILLING:

  1. First of all, include the cream cheese(at normal temperature) in a big bowl.
  2. Beat it using the electric mixer to make it smooth & creamy.
  3. Include the sweetener in it & whip again to fully incorporate.
  4. Now, include the essence of vanilla, sour cream, & matcha powder.
  5. After combining them well, begin adding eggs.
  6. Include an egg, mix it, then add another egg and mix it again.
  7. At the end, mix the flour of coconut, if using.

ASSEMBLING:

  1. Transfer the filling(cheesecake) over our baked crust now that it has cooled.
  2. Cover the whole pan with the foil of aluminium.
  3. Place it in the water bath & shift the whole setup to the oven(it’s already hot).
  4. When you see the edges are firm up with a jiggling center, the baking is done at this moment.
  5. It will take ~ fifty minutes.
  6. After baking, the cheesecake should still be in the oven(turned off) with the door open.
  7. Once an hour has passed, transfer the cheesecake to the counter.
  8. Shift it to the refrigerator for chilling purposes after bringing it to the ambient temperature.

TIPS:

  • Using a water bath will distribute the heat evenly, which prevents the cracks in the cheesecake post-baking.
