INGREDIENTS:
- 2 tablespoons unsalted butter
- 1 small chopped onion
- 2 chopped celery stalks
- ¼ cup diced turnip
- 2 pieces of crushed garlic
- 1 bay leaf
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- ¼ cup almond flour
- 4 cups lobster stock
- 1 cup dry white wine
- 1 & ½ cups heavy cream
- 2 cups cooked Maine chopped lobster meat
- Salt and newly ground black pepper
- 1 tablespoon fresh lemon juice
- Fresh parsley or chives

INSTRUCTION:
- Put the butter in a large pot and melt the butter on moderate heat. Include the turnips, celery, & onions in the pot.
- Saute them for 5 to 7 minutes or till they get soft and tender.
- Add the crushed garlic to the pot and cook them for 1 to 2 minutes or till we get a nice smell of garlic.
- Now we add the almond flour to the pot to make the roux and mix with the whisk continuously till the color of the flour gets light golden.
- Add the lobster stock and white wine to the pot.
- Mix with the whisk carefully to dissolve the roux and make it smooth.
- Allow the stock mixture to boil slow the flame.
- Allow it to cook on low flame for 15 to 20 minutes so that the flavors will get incorporated in each other.
- Then add the heavy cream and mix the cream with the spatula or ladle.
- Cook them for more 5 minutes till the soup becomes creamy and silky.
- Now we can add the lobster meat to the soup & cook the soup for an additional 3 to 4 minutes till the lobster gets heated enough.
- Avoid overcooking the lobster because it can make the lobster tough.
- Then add the cayenne pepper, paprika, pepper powder & salt and mix with the spatula.
- Now we can pour the soup with the ladle in the bowl.
- Garnish the soup with parsley & chives and serve the soup with keto-friendly sides.
TIPS:
- We can add a spoonful of butter after the addition of cream to make this soup rich.
- You can also add coconut cream to make the even cream texture of the soup, but it may leave the taste of the coconut in the soup.
- We can also add little red pepper flakes for the boost of color and also make it a little spicy.
