The homemade mayonnaise is used to make dips, and Salad dressings as well. If you wish to add a sweet touch to your mayonnaise you can add any low-calorie powdered sweetener in the little amount so that it does not increase your carb count. The homemade version of Keto Mayonnaise is much better than the commercial one as we know the quality standards of all the ingredients used and work with proper hygiene. EQUIPMENT:

A Food Processor or
Stand Blender 1 or
An Immersion blender

 

INGREDIENTS:

  • 1.25 cups of oil, about 300 ml.
  • A heaped teaspoon of Dijon mustard.
  • To taste black pepper, ground.
  • 2 yolks of egg.
  • Two Tbsp. or to taste lemon juice.
  • 1 or 1.5 tablespoons of Vinegar.
  • A quarter of a tsp or to taste salt.

 

INGREDIENT DIRECTIVES:

OIL: Try your best to take any light-flavored oil or a neutral oil. You can also mix neutral oil with extra-virgin Olive oil keeping neutral oil in a high ratio.
EGGS: Always use those egg yolks that are at normal surrounding temperature.
VINEGAR: The recipe uses white vinegar but you can also use apple cider vinegar
DIJON MUSTARD: You can use Yellow mustard, or mustard powder as well but be careful to add a small amount.

INSTRUCTIONS:

  1. Transfer the egg yolks to a tall glass jar with mouth wide open.
  2. Add Dijon mustard, vinegar, and salt one by one over each other.
  3. Now add oil to form the top layer
  4. Keep remember one thing here don’t try to whisk or stir throughout from the first step to the addition of oil.
  5. Once you complete the layering of ingredients, now insert the immersion blender into the bottom where egg yolks are present.
  6. Start blending. When you observe the mixture starts to become white then move the running blender up and down slowly and continue blending till the whole mixture in the Jar turns White.
  7. At last, add black pepper, and juice from the lemon and blend once to mix.
  8. Your homemade mayonnaise is ready.

FLAVOURING VARIATIONS OF MAYONNAISE:

CHIPOTLE MAYO: As your mayonnaise gets ready, you can blend 2 chipotle peppers with each cup of plain mayonnaise to get the perfect chipotle mayonnaise.
GARLIC MAYO: Add a couple of teaspoons of garlic powder or two cloves of garlic paste with a cup of plain mayonnaise.
SRIRACHA MAYO: Take one cup of mayonnaise and add two tablespoons of sriracha sauce, 1 tsp of coconut aminos, and a tablespoon of lime juice. Combine well to make sriracha mayo.
MAYO KETCHUP: Combine a cup of mayonnaise with half a cup of keto, and homemade ketchup. The perfect mayo ketchup is ready for the burger, or french fries
BUFFALO MAYO: Take a cup of mayonnaise in the blender. Add a quarter of a cup of shredded blue cheese, 2 tablespoons of chopped, fresh chives, and two tbsp of sriracha sauce. Just blend to combine all of them well and you have your buffalo sauce ready.
ITALIAN MAYO: Add 3 tsp of dried Italian herbs and three tablespoons of chopped chives to a cup of mayonnaise. Mix well to form the Italian mayo.

TIPS:

  1. Use the vertically long jar to layer every ingredient properly.
  2. Make sure to keep all your ingredients for mayo making at normal surrounding temperature.
  3. If your mayonnaise doesn’t combine well. Some tricks may help you:
  4. Add two tbsp of hot water to combine and thicken the mayonnaise well.
  5. Take a little Dijon mustard in a bowl and mix a little plain mayonnaise in it. Once they mix then transfer that mixture in the whole plain mayonnaise and mix well.
  6. You can also take an additional egg yolk in place of Dijon mustard to emulsify the mayo properly and mix it with the same procedure as you mixed Dijon mustard.

 

STORAGE INFORMATION:

Transfer the mayonnaise to the glass jar and seal it tightly. Use within a couple of weeks while keeping it chilled in the refrigerator.

It is recommended never to freeze the Mayo as the egg yolks and oil get separated when you defrost the frozen mayonnaise.
