Keto Popcorn (Cheese puffs) is a great keto snack for movie nights. They are too low in carbs and high in fats as they consist of cheese. The only technique they use is that you have to remove moisture from the pieces of cheese. If even a tiny amount of moisture remains in the cheese pieces, they will never pop or puff like popcorn. If you have achieved success in removing complete moisture from the pieces of cheese then the remaining work will be effortless for you. There is no hectic cooking and chopping. EQUIPMENT:

  • 1 baking tray.
  • An oven.

INGREDIENTS:

  • 113 grams of provolone cheese.
  • Sweet corn extract, 3/4th tsp.
  • Half a tablespoon of butter or coconut oil has a butter flavour.
  • 1.5 tablespoons of cheddar cheese powder, white.

INSTRUCTIONS:

PRE-BAKE (OPTIONAL PROCESS):
  1. Set the oven’s temperature at 148 C to heat it. Meanwhile, spread the sheet of parchment paper on the baking tray.
  2. Cut the cheese into half-inch cubes. Place them on the tray such that each piece is an inch apart from the other.
  3. Insert the tray containing the cheese cubes into the oven. Bake for a short while until the cheese starts to melt and lose shape but do not spread too far.
  4. When you take the tray out, use the spoon to gather the cheese in a round shape.
  5. Cool them to normal temperature.
BASIC KETO POPCORN CHEESE PUFFS:
  1. Cover the baking sheet of rounded cheese pieces with a kitchen towel.
  2. Leave it on the counter for the time it takes to harden.
  3. This process will take 3 or more days.
  4. Remove the kitchen towel and insert the tray in the oven to puff the cheese pieces once they are hard.
  5. Watch carefully. Take the tray out once you observe most of the cheese pieces puff up.
  6. They will be more crispy once they come to the surrounding temperature.
  7. Your crispy cheese puffs are ready.
MAKING THE TOPPING:
  1. Mix the corn extract and butter or butter-flavoured coconut oil.
  2. Mix the keto cheese puffs very well with the above-prepared mixture to give them the traditional popcorn fragrance.
  3. Dust and cover the popcorn with cheese powder.
  4. Now serve and enjoy!

TIPS:

Cut the cubes of the cheese such that all pieces have equal size. So that they get dry and bake at a similar rate.

Melt the cheese pieces carefully before hardening them because if the cheese melts completely then it will not puff up.

Remove the moisture of the cheese completely by placing it on the counter for 3 days or a week till they are completely hardened. Otherwise, it will not pop like the popcorn.

The use of butter-flavored coconut oil gives a strong butter flavor but you are free to use butter in place of that. Oil or butter is not only used to give the butter flavor to the cheese puffs but they are also used to stick the cheese powder.

When we moisten the crispy cheese puffs with oil or butter, it will become soft after some time. Thus, it is best to coat the butter and dust with cheese powder when you are ready to eat or serve.

STORAGE INFORMATION:

As these are dry snacks, you don’t have to refrigerate them. You have to keep them locked in a container and easily consume them in a week. They will be best crispy if you coat them with oil and cheese powder at the time of serving.

You can use any hard cheese. This recipe uses provolone cheese. You are independent to use any of the white cheddar, yellow cheddar, and gouda cheese.
