ONION

  • The addition of chopped medium-sized onions gives sweetness and depth. Don’t increase the amount to keep the carbs low. You may also replace it with green onions.

DRIED CHILES

  • Add three of the chiles that are ancho, guajillo, and pasilla with their stems and seeds to give smoky flavor and appealing color to our dish. If you didn’t find them, use chipotle in adobo or chili powder.

PORK SHOULDER

  • Boneless pork shoulder will be required after being prepared in chunks. Traditional pozole also uses the shoulder meat, as it is rich and tender. We don’t need to replace it as it is already low in carbs. You may swap it with chicken thighs.

SPICES

  • We’re adding salt, cumin, oregano, black pepper, and some bay leaves. These spices give Mexican flavor to our soup, keeping it naturally free from carbs.

CHICKEN BROTH

  • Always go for the broth that contains low or no sodium so that you can control the salt. You may also use the homemade version of chicken broth for extra taste.

CAULIFLOWER RICE OR CABBAGE

  • You will use the shredded cabbage or cauliflower rice in place of hominy. Cauliflower rice will give you the texture that is too close to the regular hominy base. Using shredded cabbage will add a delicious crunch.

GARLIC

  • The addition of minced garlic will give you the classic flavor, and being keto, it doesn’t need any replacement. You may use the powdered garlic if the fresh cloves are not available.

INSTRUCTIONS

  1. All three of the dried chiles should be dipped in hot water until tender.
  2. Add the soaked chiles to the blender along with the onion and garlic.
  3. Blend them with a little broth into a smooth chile paste.
  4. Add oil to a big pot and keep it over a medium flame.
  5. Once the oil warms up, add the pork chunks to it.
  6. Brown them from all sides and then keep them in a plate at your working counter.
  7. Add that smooth Chile paste to the same pot and cook it for around three minutes.
  8. Then mix oregano, cumin, or bay leaves into that paste.
  9. After a bit of cooking, add the chicken broth and mix.
  10. Return the park chunks to the pot.
  11. Reduce the lame, cover the pot, and cook it for around ninety minutes.
  12. Mix the cauliflower rice or shredded cabbage into the soup.
  13. After ten minutes, ladle the Keto Pork Pozole into your serving bowls.
  14. Garnish the soup with jalapenos, radish, lime wedges, avocado, and cilantro.
  15. Serve the warm with the fresh toppings.

TIPS

  • The prepared soup develops more flavors when it is kept in the fridge.
  • Use chipotle peppers or extra pasilla if you prefer the spicier soup.
  • To make the flavor richer, the dried chiles should be soaked ater toasted.
  • If you are in a hurry, cook the soup in an Instant Pot, which reduces half of the cooking time.

HOW TO PRESERVE THE LEFTOVERS

CHILLING

  • Save the remaining soup in a sealed container. Refrigerate it for around four days.

FREEZING

  • Pack the soup as directed above using the freezer-safe container or bags. They can be perfectly frozen for approximately ninety days. Just add the cabbage or cauliflower rice after defrosting the soup.

Will the chicken work in place of the pork?

  • Yes, you may use the thighs of the chicken or chicken drumsticks to make cooking even faster.

Is it possible to make it vegan along with keto?

  • You need to swap the pork with mushrooms or jackfruit, chicken broth with vegetable broth, and use only plant-based oil. Your pozole will become suitable for vegan + keto diets.
