  • Pumpkin 15-0Z (puree)
  • chicken broth, 4 cups
  • salt 0.5 tbs
  • pepper 0.5 tbs
  • garlic 0.5 tbsp. (powder)
  • thyme 1 tbs (fresh)
  • heavy cream, 0.5 cup

INGREDIENT NOTES:

You can take the quantity of pumpkin puree according to family members.
You can make it spicy with the use of chili powder.
I use chicken broth but you can change it with chicken stock.

INSTRUCTIONS:

  1. Put your saucepan on the stove and include pumpkin puree, chicken broth, salt, pepper, thyme, and garlic in it.
  2. Now turn the stove on and start boiling the mixture.
  3. After one boil, slow down the heat of the stove for almost 10 minutes.
  4. The slow cooking of the soup will mix all things well and make it more flavorful.
  5. Take up the saucepan from the stove and give time to reduce the extra heat from it.
  6. Now you can add heavy cream to the keto pumpkin soup.
  7. Include the soup in the serving bowl.

GARNISHING:

  1. You have some options to garnish the soup.
  2. You can sprinkle the parsley on the soup.
  3. Use sour cream for decorating the soup.
  4. Papitas and dried oregano are also best to garnish it.

TIPS:

  • Fresh pumpkin is very best to make the puree for the soup.
  • Take a medium-sized pumpkin and cook it at 325 degrees in the oven.
  • Clean the inside of the pumpkin and wash it.
  • Brush out the outer sides of the pumpkin with oil.
  • Almost 40/45 minutes are enough to bake & 10 minutes to cool it.
  • After that, mesh it with a fork and collect the puree in a bowl.
