INGREDIENTS:

FOR THE STEAK:

  • 4 sirloin or flank steaks
  • 2 tablespoon olive oil
  • Black pepper
  • Salt
  • One tsp. ground cumin
  • 1 tsp. smoked paprika

THE RANCHERO SAUCE:

  • 1 tbsp. olive oil
  • ½ small onions
  • 2 cloves garlic
  • 1 jalapeño
  • 1 & ½ cups diced tomatoes
  • ½ tsp. chili powder
  • ½ tsp. oregano
  • Salt
  • 1 tbsp. chopped cilantro

FOR THE CAULIFLOWER:

  • One medium-head cauliflower
  • Two tbsp. olive oil
  • ½ tsp. garlic powder
  • Salt and pepper

INSTRUCTION:

  1. Turn the oven on to 425°F.
  2. Put the cauliflower in the bowl and add the black pepper, garlic powder, salt, & olive oil.
  3. Then toss the cauliflower so that the seasoning will adhere easily.
  4. Arrange the cauliflower on a baking sheet.
  5. Then bake the cauliflower for 20 to 25 minutes or till it gets golden & soft.
  6. Put the steak in the bowl and add cumin, paprika, salt, & black pepper in the steaks.
  7. Then toss the steak so that the seasoning will adhere easily.
  8. Give those ten minutes to rest at an ambient temperature.
  9. We can heat the skillet on the medium to high heat.
  10. Add oil to the skillet and char the steaks for three to four minutes from both sides.
  11. Then we can pour the oil in the similar skillet and cook the onion, garlic, and jalapeño for 2 to 3 minutes.
  12. Add the tomatoes, oregano, salt, and chili powder and boil for 6 to 8 minutes.
  13. We can blend the sauce to make it a smooth texture; otherwise, leave it chunky.
  14. Add the chopped cilantro and mix.
  15. Top steak with a heaping dollop of ranchero sauce and serve over roasted cauliflower.
