- Three-fourth tsp of powdered garlic
- A teaspoon of salt
- Bulbs of fennel, 2 pounds
- 0.5 teaspoon of powdered peppercorn
- Oil of olives, three tablespoons

INGREDIENT NOTES:
Oil of Olives:
You may use light/extra-virgin oil of olives or oil avocadoes. Use which one you prefer.
SPICES:
I am using powdered peppercorn, garlic powder, & salt to season the veggies. You are not bound to them. You may include your choice of spices to change the taste of the veggie.
BULBS OF FENNEL:
You might find this veggie in the fall or spring season. They consist of bulbs, celery-like stalks, & dill-like leaves. We only use the bulb in this recipe.
INSTRUCTIONS:
- Switch the oven on & heat it empty at 204 degrees C.
- Wash the fennel very well & drain its water to dry it.
- Remove the stalks & cut the root ends.
- Now divide the bulb of the fennel lengthwise into half.
- Divide each half into two equal parts lengthwise.
- In this way, you have the wedges of fennel bulbs at the end.
- Pick a big vessel & place all the wedges of fennel bulbs in it.
- Now include oil & spices and mix well to coat each wedge in a proper way.
- Take a sheet pan & set the seasoned wedges in a layer at a little distance.
- Insert that sheet pan into the oven for 30/35 minutes.
- Turn over the fennel wedges when half of the time has passed.
- Check the wedges using a fork once time finishes.
- They are ready if you find them tender & golden brown in a nice manner.
TIPS:
While cutting the bulbs from the bottom, be careful not to cut the excess. Otherwise, the bulb will disperse into petals.
Spreading parchment never gives the veggies the beautiful roast that we want. It is better to spread the seasoned veggies directly in the pan. Spread the foil under the veggies before baking.
Give them time to be nice golden brown according to the thickness of the wedges.

Pack the remaining roasted fennel in a sealed vessel & refrigerate it for 5-6 days.
FREEZER:
Cut the wedges & put them in boiling water for a minute. After that, pass them through the cold water. Drain their water & then dry them. Keep them in a sealed vessel or bag that is ideal for freezing. Freeze them for around 0.5 years.
