INGREDIENTS:

  • 2 medium zucchinis
  • 1 cup mushrooms
  • 2 tbsp. olive oil or butter
  • 2 pieces garlic
  • Salt
  • Black pepper
  • ½ tsp. dried thyme or Italian seasoning
  • Fresh parsley or grated Parmesan

INGREDIENTS NOTES:

ZUCCHINI:

  • We have to select medium-sized to get a firm zucchini with a smooth skin. We should not have to get a big zucchini because it has more seeds and eliminate more water. We have to cut into quarter rounds or half-moons to ensure consistent cooking.

MUSHROOMS:

  • You can use white mushrooms, cremini or Bella to get the maximum taste and flavor. We have to clean the mushrooms with the wet towel instead of washing them to prevent the excess moisture.

BUTTER OR OLIVE OIL:

  • Butter makes the dish more indulgent & tasty, while olive oil makes it light and dairy-free. We should have to use grass-fed butter to have the increase good fats if you’re following a rigorous keto diet.

GARLIC:

INSTRUCTION:

  1. Liquefy butter on medium heat in a big skillet.
  2. Sauté the garlic for 30 seconds till it becomes fragrant.
  3. Include the mushrooms and heat for about 3 to 4 minutes or till they start to get brown and their juices begins to release.
  4. Add the zucchini, thyme, salt, and pepper.
  5. Sauté them for another 4 to 5 minutes or till the zucchini get soft but not mushy.
  6. We can taste & adjust the seasoning if required.
  7. Garnish the dish with the parsley or parmesan cheese & serve warm.

TIPS:

  • We have to cook in batches if needed rather than packing the pan too full to prevent the vegetables from steaming.
