Keto Sheet Pan Pancakes are a nutritious packed and delicious quick breakfast recipe. It becomes quite tough when you have to prepare the pancakes for a larger number of people. This recipe comes up with the solution. Bake a large stock of pancakes in sheet form and then cut it into even square slices so you don’t need to stand in scorching kitchen heat to get the pancakes ready. Keto sheet pan pancakes are a grab-and-go breakfast with quick batter preparation which only takes 15-20 minutes and then bake. You can easily do other stuff in your busy mornings when your sheet pan pancakes are in the Oven.

EQUIPMENT:

  • Baking Pan 1
  • Spatula 1
  • Blender 1

INGREDIENTS:

  • 3 cups of Almond Flour
  • Coconut flour 2 tablespoons.
  • 1 cup of hemp or almond milk
  • Vanilla extract 2 teaspoon.
  • 6 tablespoons of Swerve sweetener
  • Five eggs, Large.
  • Melted and cooled Butter, 6 Tablespoons
  • One tbsp of Baking Powder
  • Half a teaspoon of Salt.
  • ⅓ cup sugar-free chocolate chips

INGREDIENTS DIRECTIVES:

  • MILK: You can also use low-carb cow’s milk but this recipe uses Non-dairy Milk like Almond or coconut milk.
  • KETO FLOUR: This recipe uses coconut flour along with almond flour for desired consistency but if you don’t like to use both flours then opt for Almond flour only.
  • EGGS: Use large Eggs for the keto pancake recipes.
  • BUTTER: It is used to give a soft and juicy wet feel to the pancakes.
  • CHOCOLATE CHIPS: This recipe uses sugar-free chocolate chips for topping but you can use low-carb berries as well if you don’t like chocolate.
  • SWEETENER: You can use pure stevia or pure monk fruit but use them in low quantities as they are in their purest form. Here the recipe uses granular swerve.

INSTRUCTIONS:

  1. Spread the Parchment paper on the baking sheet pan and brush it with oil. Place it away.
  2. Set the Oven to 400 degrees F.
  3. Take the Blender. Add vanilla extract, almond milk, eggs, and butter and pulse to combine them well.
  4. Mix salt, coconut flour, sweetener, and baking powder in a container and Blend well.
  5. Add the dry ingredients mix to the wet ingredients in the blender and blend to make a smooth batter that is free from lumps.
  6. Wait for some time till the batter thickens. Then transfer it to the prepared baking pan and spread it evenly.
  7. Distribute some chocolate chips on top and then place it in an Oven for fifteen minutes.
  8. Take the baked pancake out of the Oven cut into 15 equal square slices after it comes to normal temperature.
  9. Enjoy it with any of your favorite low-carb pancake syrup.

TIPS:

  1. For your convenience and to make the batter more airy, use the food processor to mix all the ingredients.
  2. Always use fresh Baking powder because when baking powder comes in contact with the air it loses its properties and does not let the batter rise.
  3. Line the baking pan with parchment paper and brush it with oil as well to make the pancake separate from the baking sheet easily.

STORAGE INSTRUCTIONS:

If you have leftover squares of pancakes, place them in a box with parchment paper in between and close the lid tightly.

    You can freeze them for up to 60 days.
  • IN FRIDGE:
    You can keep them covered in the fridge for 5 days.
