INGREDIENTS:

  • One cup of marshmallows (sugar-free)
  • 2.5 cups of almond flour (blanched)
  • Dark Chocolate chips (sugar-free), 1 cup
  • Two teaspoons of keto sweetener
  • A tablespoon of honey (sugar-free)
  • Powder of cinnamon, 1 tsp
  • Five tablespoons of melted butter (unsalted)
  • One-fourth tsp of salt

INGREDIENT NOTES:

FLOUR OF ALMOND:
Choose the flour of almonds with very fine particles to have the perfect texture.

MARSHMALLOWS:
We are using here the keto version of marshmallows. I prefer homemade over commercial ones. As the homemade are much healthier. You can roast them before using them & give them the diagonal cut.

KETO SWEETENER:
Use the perfect blend of natural extracts of allulose & monk fruit brown sugar. This way you will have the zero-carb brown sugar substitute. Their taste & work resemble too much to regular brown sugar with lots of carbs.

CHOCOLATE CHIPS:
Use the keto version of chocolate chips of your preferred brand. It will have the delicious taste of chocolate in your bars along with marshmallows.

CINNAMON:
Adding a small amount of powdered cinnamon gives a nice aroma & flavor.

HONEY  SUBSTITUTE:
Use the good-quality keto honey substitute that gives the true flavor of honey to the crust of our bars.

BUTTER:
If using the salted version, then skip the addition of salt in a separate way. Otherwise, you may use unsalted butter.

SALT:
Including the minute amount of salt spikes balances the taste to its top level.

INSTRUCTIONS:

 

PREPARATIONS:

  1. Switch the oven on & heat it to 177 degrees C.
  2. Pick a square baking pan (8 by 8 inches) & spread the parchment in it.
  3. Keep the two sides of the parchment extending above the pan.

CRUST MAKING:

  1. Place a big vessel for mixing the dry items.
  2. Include a sweetener blend (keto), salt, flour of almond, and cinnamon (powdered).
  3. Mix them to combine well.
  4. Include the honey (keto) & butter in another small vessel.
  5. Warm them up using the microwave till the melting of butter.
  6. Then mix both of them in a proper way.
  7. Include that melted butter mixture in the dry items, mix, & combine well.
  8. Now the mixture for your crust is ready.
  9. It shows a 100% resemblance to the crust of Graham crackers.
  10. Divide the mixture into 3 equal parts & shift the two parts in the baking pan.
  11. Save the remaining 1 part for garnishing.
  12. Level the crust mixture by pressing it.
  13. Shift it into the oven & bake till you see the margins are beginning to turn brown.
  14. Open the oven’s door once the crust is ready & extricate the pan from the oven.

GARNISHING:

  1. Wait for it to cool a little bit (takes 6–7 minutes).
  2. Then sprinkle the keto chocolate chips to cover the whole surface.
  3. Arrange the diagonal-cut marshmallows on the whole crust at equal distances.
  4. At last, spread the crumbs of crust that you have saved earlier.
  5. Insert it in the oven for ten minutes or so.
  6. Exceed the oven time according to how much darker a shade of marshmallows you want.
  7. Be alert that marshmallows won’t burn.
  8. Finally, pull the baking pan out of the oven & place it on the counter.
  9. Wait for it to become warm, then hold the extended edges of the parchment to pull it out.
  10. Place it on the working shelf & slice it.

TIPS:

We recommend serving these bars warm. It is difficult to hold them as they are too soft when they come right from the oven. If you wait for them to cool down, then bars will be firm to handle, but marshmallows will become hard.
You have the option to soften the marshmallows in the microwave. Be careful, as heat softens them; it will also darken the color of the marshmallow. Thus, you must be vigilant while doing this.

STORAGE INFORMATION:

Pack the S’mores bars in the locked vessel, & they will be safe on the counter for 3/4 days.

FRIDGE:
Pack the bars as directed above & freeze them for about 7/10 days.

FREEZER:
Wrap each bar using the cling wrap. Place them in the freezer-safe vessel to avoid freezer burns. Freeze them for about 0.5 years.

That is possible to make the recipe suitable for vegans. Swap the butter with coconut oil. Use vegan marshmallows that have grass-fed gelatin to have the vegan & keto s’mores bars.

Will it be possible to heat the bars again?
You may reheat the bars. But the heat that reheats the bars will also roast the marshmallows more. So, you need to be careful that marshmallows won’t get burned.
