INGREDIENTS:

  • 2 cups cauliflower rice
  • Two cups fresh spinach
  • 2 tbsp. ghee
  • One tsp. cumin seeds
  • 1 small onion
  • 1 green chili
  • 1 tsp. ginger-garlic paste
  • ½ tsp. turmeric powder
  • ½ tsp. garam masala
  • Salt
  • 1 tbsp. lemon juice
  • Fresh cilantro

CAULIFLOWER RICE:

  • Cauliflower rice is keto-friendly substitute of the traditional rice. Grate the cauliflower or transfer them in a food processor till the cauliflower rice is form to prepare them at home. We can also use store-bought rice but it is deprives of the preservatives.

FRESH SPINACH:

  • We have to use fresh spinach for the nice taste & texture. We have to chop it finely to ensure consistent cooking. We have to defrost the spinach well and wring out any extra water if using frozen spinach to prevent sogginess.

GHEE OR OIL:

  • Ghee is excellent for keto and offers a rich, classic flavor. Use avocado, coconut, or olive oil in place of ghee for a vegan alternative.

GREEN CHILI:

  • Green chili and onions provide some spiciness and depth. Adapt the chili to your preferred level of heat or leave it out completely for a softer flavor.

SPICES:

  • Spices like turmeric, garam masala, & cumin add fragrance and warmth. We have to use fresh spices for more flavors.

LEMON JUICE:

  • Lemon juice is optional and it adds the tangy taste and also makes the dish more indulgent.

GARNISH:

  • We can garnish the spinach rice with the cilantro or parsley.

INSTRUCTION:

  1. We can put the cauliflower florets in the food processor to grind them into rice-sized granules or grate them and put them aside.
  2. In a pan, we can heat the oil or ghee.
  3. We can include the cumin seeds in ghee and let the cumin seeds crackles and get brown.
  4. Then add the diced onion, ginger-garlic paste, & green chili and sauté for two to three minutes.
  5. We can cook the spinach for two to three minutes or till it wilts.
  6. Now we can add salt, garam masala, & turmeric and stir thoroughly.
  7. We can combine the spinach mixture with the cauliflower rice and mix both with the spatula.
  8. Then we can place the lid on the pan & cook for five to seven minutes by mixing in between.
  9. We can add the lemon juice to Keto Spinach Rice & garnish with the cilantro.

TIPS:

  • We should not have to overdo the cauliflower rice otherwise they will get smushy.
  • You can also add the tofu or paneer cubes or some chicken to make the protein-loaded dish.
  • We can also include keto-friendly veggies like zucchini or bell peppers to make them nutritious and healthy.

FRIDGE:

  • We can transfer the spinach rice to the airtight container and preserve the dish for 3 days.

FREEZER:

  • We can also save the dish for one month in the freezer.

REHEAT:
