Keto King Ranch Chicken Soup is a delicious, thick, and creamy soup. It is prepared in the slow cooker and it takes just 15 mins to prepare this soup and it cooks on its own. This ranch chicken soup is low in carb content and contains only 3.6g of carbs, 0.7g of fiber, 2.9g of net carbs, and 27.1g of proteins making it a protein-rich soup. INGREDIENTS:

  • 1 ½ lb. chicken thigh (boneless & skinless)
  • 1 large jalapeno (diced)
  • ¼ cup butter
  • 3 pieces of garlic (grated)
  • One tbsp. chili powder
  • One tbsp. cumin powder
  • 3 cups of chicken soup
  • 1 tsp. salt
  • ¾ tsp. pepper
  • ¾ tsp. glucomannan
  • 2 cups of cheddar (shredded)
  • 4 ounces of cream cheese

INGREDIENT NOTES:

CHICKEN THIGH:

  • I use meat of chicken thigh because of its juicy meat. Additionally, we may utilize chicken breast without bone & skin.

CHICKEN BROTH:

  • I use store brought chicken broth; we can also make its soup at home.

GLUCOMANNAN:

  • Glucomannan is use as a thickening agent to maintain consistency of the soup; you can also use xanthan gum or we can omit the addition of glucomannan.

CHEDDAR CHEESE:

  • I use shredded cheddar cheese, you can shred it at home also you can use mozzarella if you like.

CREAM CHEESE:

  • Cream cheese is added in this ranch chicken soup to give the flavor and also to maintain its consistency.

INSTRUCTION:

  1. Take a slow cooker and add tomatoes, chicken thighs, and jalapenos in a slow cooker (6-quart).
  2. Take a sauce pan and pour the butter (melted) and heat it up on heat (medium).
  3. Include the garlic in the butter and saute the garlic till it gives nice fragrance.
  4. Include the chili powder and cumin in the saucepan and toss it for about one minute.
  5. Pour the chicken soup in the saucepan and mix it properly with the whisk.
  6. Boil the soup and set it aside and include pepper and salt in the chicken soup and mix it.
  7. Include the glucomannan in the soup to thicken it.
  8. Place the slow cooker’s chicken broth mixture on top of the chicken.
  9. And put the cooker on high for three hours.
  10. When chicken is done, place out the chicken and put in the plate.
  11. Shred the chicken with the forks in the plate.
  12. Add the cheese and cream cheese in the cooker and close the cooker and melt it for ten minutes.
  13. Blend the chicken ranch soup with the help of immersion blender to make it smooth.
  14. Transfer the shredded chicken back in the soup.
  15. Serve the hot soup garnish with cheese and cilantro.

INSTANT POT:

  • Make the soup with the same process and cook it on flame (high) for 30 minutes. vent out the pressure automatically before opening the instant pot.

STOVE TOP:

  • Add the chicken, tomatoes, and jalapenos in the same saucepan after making the sauce and boil the chicken for 30 mints then proceed forward with other steps in the same way.

STORAGE INFORMATION:

FRIDGE:

  • Transfer the chicken soup in the sealed box and store it for 2-3 days in the fridge.

FREEZER:

  • You can transfer the soup in the sealed box and freeze for 2 months.

FAQs:

Will we use any other cut of chicken instead of thigh?

  • Yes, absolutely you can use meat of chicken breast (without skin & bone) in place of chicken thigh.

Will I use any other thickener?

  • You can use xanthan gum in place of glucomannan to thicken the soup. We could also exclude the addition of thickener if you like thin consistency of chicken soup.
