Keto Mexican Chorizo and Eggs are a delicious and mouthwatering dish. We only prepare them in 35 mins & are perfect for breakfast. This dish uses some basic ingredients which are easily available in the pantry or grocery store. Chorizo was invented in the Iberian Peninsula, Spain and it is in the form of sausage. But chorizo had many varieties and forms according to the region. This recipe of Mexican Chorizo and Eggs is very different from Spanish chorizo and this recipe is invented in Mexico and is very spicy. To make it keto, decrease the onions quantity and serve it with cauliflower rice. It is low in carbs with just 5.6g of carbs, 1.5g of fiber, 4.1g of net carbs, and 23.7g of proteins, which makes it high in protein breakfast.

EQUIPMENT:

INGREDIENTS:

  • 1 tbsp. olive oil
  • 1 medium red pepper (chopped)
  • ¼ cup chopped onion
  • ¼ tsp. salt
  • 2 pieces of garlic (minced)
  • 1 lb. bulk chorizo
  • 8 large eggs
  • 3 tbsp. heavy cream
  • 4 ounces of crumbled cotija cheese

INGREDIENT NOTES:

RED BELL PEPPER:

  • We have used red bell pepper in this chorizo and eggs dish; to make it more colorful you can add a mix of different colors of bell pepper (yellow, orange, and green).

ONION:

  • Include onion to the dish to give the flavor; we can use red or white onion.

GARLIC:

  • Use freshly minced garlic for this chorizo and eggs recipe; it enriches the taste of this dish.

CHORIZO:

  • We have used pork chorizo to make this chorizo and egg dish. We can also use chicken chorizo in the recipe.

HEAVY CREAM

  • Utilize heavy cream to make the eggs fluffier.

COTIJA CHEESE

  • Cotija cheese has been invented in Mexico; this cheese is old, white, and crumby. It is also salty in taste and easily available in grocery stores. You may garnish the dish with cheddar cheese as well.

INSTRUCTIONS:

SAUTE THE VEGGIES:

  1. Take a skillet (large) and put it on heat.
  2. Pour the oil of olive in the skillet and warm up the oil.
  3. Include the pepper and onion in the oil and mix it with the salt.
  4. Saute the vegetables till they become soft for about four minutes.
  5. Include the garlic in the oil and toss it till you get a nice aroma from the garlic.

COOK THE CHORIZO:

  1. Include the chorizo in the pan and cook them for seven to eight mints.
  2. Break the clumps of chorizos in between cooking with the wooden spoon.

ADD THE EGGS:

  1. Take a bowl (medium) add the eggs and heavy cream and mix it with the whisk till you have the smooth consistency.
  2. Decreases the heats (medium-low) add the mixture of eggs and heavy cream in the skillet and cook it for about one minute.
  3. Flip the side of the egg with the spatula to cook the other side of the egg.

TOP WITH THE CHEESE:

  1. Scramble the eggs and cook them by flipping them frequently.
  2. When eggs are properly cooked, include the cotija cheese and chopped cilantro before you serve.
  3. The Mexican Chorizo and Eggs are ready.

TIPS:

  • This is a very easy breakfast recipe but requires scrambled eggs to cook on heat (low).
  • Do not use a cast iron skillet as it will get badly stuck in it; always uses a non-stick skillet or ceramic-coated skillet.
  • Add more oil to cook the dish while using iron skillet.
  • If you do not find the keto-friendly chorizos you can simply use ground meat of pork or chicken to make this chorizo and egg dish.

  • Transfer these chorizos to the individual boxes and stock them up for a week.

  • Put these chorizos in the individual boxes and stock them up for three months.
