- A quarter cup of fresh peaches, diced
- One-fourth cup of fresh strawberries(diced)
- 2 tablespoons of erythritol, powdered
INGREDIENT NOTES:
SWEETENER:
- Powdered sweetener dissolves easily compared to the granular ones. Use either erythritol/allulose & adjust the amount as per your taste.
ESSENCE OF VANILLA:
- It brightens up all the flavors in the fluff.
CREAM CHEESE:
- If you try to beat the cream cheese immediately out of the fridge, it will be difficult for you & the results might not be perfect. Allow it to get softer at a normal temperature. Shift it on the kitchen counter from the fridge a few hours before use.
WHIPPING CREAM:
- The heavy cream is full of fats(healthy), which are a requirement of a keto diet. After whipping this heavy cream, your cheesecake fluff will get its original volume & fluffiness.
FRUITS:
PEACHES:
- Peaches have slightly more carbs. You can use it in the normal amount. Swap half of the peaches with their essence to drop the carb content even more.
STRAWBERRIES:
- This fruit is too keto-friendly & nutritious. Use it without any guilt of taking carbs.

INSTRUCTIONS:
- First of all, take the cream cheese out of the fridge to soften.
- Meanwhile, wash the fruits & keep them in the basket to strain all the water.
- Now dice the peaches & strawberries & keep them away.
- Grab a mixing bowl & include the heavy cream in it.
- Beat it till you get the peaks (stiff) using the electric (hand) mixer.
- It will take around three mins.
- Then grab another bowl, include the sweetener, salt, cream cheese, & vanilla essence in it.
- Beat for around two mins till you have the smooth & creamy experience.
- Now, grab the bowl of whipped cream & transfer it to the cream cheese mixture.
- Fold them gently to mix them properly using the spatula.
- Then include the diced fruits in it & fold again so that the fruits distribute properly in the whole mixture.
- Chilling is not compulsory, but if you chill it for around an hour, you will have the best texture.
- Serve your keto Strawberry Peach Cheesecake Fluff in the bowls or dessert cups after chilling.
TIPS:
- Whip the heavy cream separately to increase its volume & make it fluffy.
- Never overbeat or overmix, otherwise the texture will be ruined.
- Take the cream cheese out of the fridge before starting to work. It will take around twenty mins to be soft.
- The last chilling is not compulsory. The texture & flavor will enhance at their peak if you still refrigerate the fluff for around an hour.
- Strawberries are keto-friendly, so you can use them without any guilt. While peaches are slightly higher in carbs, dice them into tiny pieces. It will spread in the fluff, releasing its flavor even in a moderate amount.
STORAGE DETAILS:
REFRIGERATION:
- Cover the mixing bowl having ready fluff using a plastic wrap. Refrigerate it to enjoy it for three days. If you got the fluff separated, give it a good mix right before serving.
FREEZING:
- We don’t recommend freezing as it will release water upon defrosting. This will ruin the texture of the fluff.
FAQs:
What might be the reason for the fluff to be soft/runny?
- This issue arises if you use defrosted fruits without releasing their water or didn’t whip the cream patiently till the formation of stiff peaks.
Do strict keto dieters use this dessert?
- Sure! Made with great care not to use any high-carb items, it is fully keto compliant. The most you can do is to swap the peaches with their essence to lower the carbs even more.
Will this fluff work as a filling/topping?
- You can top the mug cakes, pancakes, or chia pudding with this yummy fluff. This cheesecake fluff also works well as a filling inside the keto crepes.
