This Keto Coquito Spanish Eggnog Recipe has all the flavor of the authentic drink without any additional sugar, making it a healthier alternative to coquito. You must try this coconut milk-based variation of eggnog if you like it! Takes 15 minutes.
2 cans Unsweetened Coconut Milk, each can is 13.5 fl oz.
Instructions
Put ingredients(On medium-low heat) for the sweetened condensed milk substitute.
Cook the mixture while whisking until all of the ingredients are thoroughly combined and the butter has melted (about 5-7 minutes)
In a high-speed blender, combine the replacement for sweetened condensed milk with the remaining ingredients.
Blend till completely incorporated (about 1 minute)
After adding, chill the pitcher for four hours.

On 12/14/2021, I revised this recipe to make the ingredients and the directions clearer. Additionally, I eliminated the eggs from this recipe because I now prefer coquito without them.
