- 1 tbsp. Avocado oil
- 1 large sliced Onion
- 1 lb. Ground beef
- 1 tsp. Sea salt
- 1/4 tsp. Black pepper
- 1 lb. Shredded coleslaw mix
- 1 15-oz. can of Diced tomatoes (with liquid)
- 6 cups Beef bone broth
- 1 tbsp. Italian seasoning
- 1/2 tsp. Garlic powder
- 2 medium Bay leaves (non-compulsory)
INGREDIENT NOTES:
AVOCADO OIL:
- Olive oil or any other neutral cooking oil of your choice can also be used.
ONIONS:
- Red onions can be used, whereas the nicest onions are white or yellow.
MINCED BEEF:
- You may use any type of beef, but I usually choose 85/15 grass-fed beef since it’s tasty without being overly fatty. Although this dish calls for hamburgers and cabbage soup, you can substitute different ground meats.
COLESLAW MIXTURE:
- This recipe for a basic cabbage soup requires very little chopping! You may simply use simple shredded cabbage if you don’t want to include the carrot.
BEEF BONE BROTH:
- Although I make my bone broth, the store-bought beef broth also works well. Vegetable and chicken broths also work well as alternatives.
SLICED TOMATOES:
- This is the type that is canned. To add more flavor and ensure that the soup has the proper amount of liquid, add them to the liquid.
HERBS AND SPICES:
- Sea salt, black pepper, bay leaves, garlic powder, and Italian seasoning (create your own for maximum taste!). Taste and add cayenne pepper if you prefer a little kick.

SAUTE ONIONS:
- In the Instant Pot (or, if using a slow cooker, in a saute pan), heat the oil.
- Sauté onions till they get soft and translucent.
PREP:
- Increase the heat to moderate-high and cook the ground meat till it gets golden brown color.
INCLUDE THE INGREDIENTS:
- Move the meat and onions to a slow cooker (or, if you’re using the Instant Pot, leave it there).
- Add the full bay leaves, Italian seasoning, stock, chopped tomatoes (with liquid), coleslaw mix, and garlic powder.
COOKING:
- In the Instant Pot or Crock Pot, simmer hamburger cabbage soup.
- Wait till the ingredients are well-cooked and softened.
- Although it’s not required, I prefer to garnish with fresh parsley.

TIPS:

- Add the lemon juice to the soup for extra tang.
- You can skip the coleslaw if you do not want to add carrots and just go with the whole cabbage it tastes the same.
RECIPE VARIATION:
- To make it vegetarian, substitute vegetable broth for the beef bone broth and leave out the meat.
- Swap the beef with ground turkey, pork, ground chicken, or casing-removed Italian sausage for hamburger soup with cabbage.
- This soup would benefit greatly from the inclusion of beans, if your lifestyle permits them. Just drain and rinse the beans before putting them in the saucepan. Try it with kidney beans or cannellini beans!
- You could add celery, bell peppers, or cauliflower to this soup and it would taste great!
