INGREDIENT NOTES & THEIR SUBSTITUTIONS:
CHICKEN SAUSAGE:
- We use chicken sausage because it adds savory Mediterranean taste and makes the dish light. You can also use turkey sausage, beef sausage, or plant-based sausage.
PENNE PASTA:
- Penne pasta is used because its shape holds the creamy cheese sauce perfectly. As a substitute, you can use rotini, rigatoni, fusilli, or whole wheat pasta.
MUSHROOMS:
- These will offer the indulgent taste & meaty texture in pasta. Alternatively, you can use button mushrooms, portobello mushrooms, or shiitake mushrooms.
GREEK YOGURT:
- It will make the sauce creamy and also offers protein and a slight tang. Instead, you can use light cream, ricotta cheese, or crème fraîche.
MOZZARELLA CHEESE:
- It makes the dish creamy & cheesy and also provides nice stretch. You may substitute it with provolone, Monterey Jack, or Fontina cheese.
PARMESAN CHEESE:
- Parmesan adds a rich, nutty flavor that enhances the sauce. Utilize Pecorino Romano or Grana Padano instead as a substitute.
SUN-DRIED TOMATOES:
- They will offer a sweet & concentrated Mediterranean taste. Alternatively, you can use roasted cherry tomatoes or roasted Roma tomatoes.
OLIVE OIL:
- Olive oil offers the dish its authentic Mediterranean taste and healthy fats. Add the avocado oil or butter instead.
