INGREDIENTS:
TZATZIKI SAUCE:
- One tbsp. lemon juice
- 1 piece minced garlic
- ½ medium cucumbers
- ½ cup full-fat Greek yogurt
- 1 tsp. Chopped fresh dill
- ¼ tsp. salt
MEATLOAF:
- 2 lbs. ground turkey
- 8 ounces of frozen spinach
- ½ cup almond flour
- 2 large eggs
- ¼ cup sliced onion
- 1 tsp. salt
- 1 tsp. dried marjoram
- ¾ tsp. recently crushed pepper
- 1 cup crushed feta cheese

INSTRUCTION:
MAKE THE SAUCE:
- Take a medium bowl and add all Greek yogurt, salt, fresh dill, lemon juice, garlic, & cucumber in them.
- Mix all the ingredients properly and put the bowl in the fridge.
MAKE THE MEATLOAF:
- Take a rimmed baking sheet and put the parchment paper on the sheet.
- Heat the oven at three-twenty-five degrees F.
- Take a large mixing bowl and add the turkey meat, pepper powder, spinach, marjoram, almond flour, onions, eggs, & salt in the bowl.
- Combine all the ingredients with your hands till they get properly mixed.
- Divide the meatloaf mixture into two parts and put half the meatloaf mixture on the sheet.
- Then add the ¾ cup of feta cheese then put the second half of the turkey mixture over the cheese.
- After that, we can shape the turkey mixture in the loaf shape.
- Put the meatloaf to bake for 1 hour to 1 ¼ hours or till the internal temperature of the turkey meatloaf reaches One-sixty degrees F.
- Once the turkey meatloaf is done put the meatloaf on the counter for some mints.
- When the meatloaf cools down take a knife and slice the meatloaf.
- Then drizzle the tzatziki sauce on the meatloaf slices.
TIPS:
- If we want that our turkey meatloaf should be perfectly cooked then check the internal temperature with the thermometer. Its temperature should be around 160 degrees F.
- We should mix all the ingredients softly with our hands till they get combined and avoid over-mixing them because it can lead to tough meatloaf.
- You can use fresh spinach to make this, but if you are using frozen spinach then properly squeeze out all the water from the spinach to avoid making the meatloaf soggy.
- If we don’t want to darken the top of the meatloaf too much then we can cover the tops lightly with the aluminum foil for half time, then remove it so it can brown a little.
