These keto Garlic Butter Rosemary Rolls are the perfect, keto, & healthy alternative to regular dinner rolls. These rolls feature cheesy dough made with keto flour. It gives the classic aroma of rosemary & garlic butter. You may serve them as a side with your favorite mains, like soup/steak. They will also taste best when served alone. INGREDIENTS:

For the dough:

  • 1½ cups shredded mozzarella cheese
  • 2 oz. cream cheese
  • A cup of keto flour(almond)

  • One egg(large)
  • ½ tsp. salt

For the garlic butter topping:

  • 3 tbsp. unsalted butter

ROSEMARY(FRESH):

  • To include the aroma of herbs & their flavor, use fresh & chopped rosemary. If you don’t have fresh rosemary available, then go for the dry one.

KETO FLOUR:

  • We suggest that finely powdered flour(almond) will work best here. So use the skinless almond flour here.

SALT:

  • Be careful while adding salt because your cheese may also contain salt. Include it as per your taste.

MOZZARELLA CHEESE:

  • We use this cheese to form the stretchy base of the fathead dough when combined with cream cheese & flour of almonds.

EGG:

  • Always use the egg at a normal surrounding temperature. It holds all the items of the dough & makes it moist.

CREAM CHEESE:

  • Use the full-fat version of cream cheese to have the perfect texture & taste of the dough when combined with keto flour & mozzarella cheese.

BAKING POWDER:

  • It is an important item to make the dough airy & soft.

FOR TOPPING(GARLIC BUTTER):

GARLIC:

  • You may mince/crush the garlic for a strong flavor.

BUTTER:

  • Use either the salted/unsalted version.

SALT:

  • If you are using the unsalted version, then you must add salt to your taste. Otherwise, there is no use of salt.

ROSEMARY:

  • To mimic the dough flavor, you need to include rosemary(fresh/dry as per availability) here as well.

INSTRUCTIONS:

  1. Switch the oven on & adjust its temperature to 190 degrees C.
  2. Grab a muffin tin or a baking sheet(as per availability).
  3. Use parchment paper if the baking sheet is available, or apply a layer of oil if you got the muffin tin.
  4. Include both of the cheeses in a bowl(microwave-safe).
  5. Shift that bowl to the microwave.
  6. Run the microwave for about 90 secs with 30 secs interval each till the cheeses melt well.
  7. Include all the ingredients(dry) in another bowl, such as baking powder, flour(almond), rosemary, and salt.
  8. At this point, include the melted cheese mixture & eggs to the mixture of dry items.
  9. Combine them well till the dough forms & knead it for a smooth texture(using wet hands).
  10. Make the eight equal portions of your dough & form a ball of each.
  11. Arrange these eight balls at an equal distance on the baking sheet or place each ball in a muffin cup.
  12. Transfer to the oven(already heated) for around half an hour or till you see them brown/golden.

What do I do if almond flour is not available?

  • Moisture content in both flours differs. You need to have that knowledge. If using coconut flour, you have to reduce the amount of flour & increase the liquids.

How to deal with the sticky dough?
