These keto crispy Hash Brown & Sausage Bites are yummy, healthy & keto snack/breakfast. You can have that perfect crisp of hash-browns without those high-carb potatoes. These crunchy bites are full of protein & taste as they feature the delicious melty goodness of mozzarella, the crunch of parmesan, delicious sausage, & spices as per taste. These are in bite form, which is why you may use them as a grab-and-go item. The best of these, Hash Brown & Sausage Bites, is their quality of being storage-friendly. EQUIPMENT:

  • Muffin tin (12-count)
  • Mixing bowls
  • Cheese grater
  • Skillet (optional for pre-cooking sausage)

INGREDIENTS:

  • 1 ½ cups shredded mozzarella
  • 1 cup shredded turnip or daikon radish
  • ½ pound ground breakfast sausage
  • 2 large eggs
  • 2 tbsp. coconut flour or almond flour
  • ¼ cup grated Parmesan cheese
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • Salt and pepper
  • Optional: 1 tbsp. chopped chives or parsley

INGREDIENT NOTES:

BREAKFAST SAUSAGE:

  • Use any breakfast sausage as per your choice, from chicken, turkey, or pork. You may go for cooked one, but we recommend buying raw sausage & cooking by yourself at home. You may use simple or spicy one.

OPTIONAL:

  • The use of herbs is not compulsory here. If you add any fresh herb of your choice, it will give a nice & different taste & aroma to your dish.

MOZZARELLA(SHREDDED):

  • We are using mozzarella cheese(shredded) here. This will bind all the items & will melt nicely in the mouth. You may choose Monterey Jack, cheddar cheese, or a mix of any two cheeses if you didn’t get mozzarella.

SEASONINGS:

  • Use spices as per your preference & taste. Be careful if your sausage & cheese contain salt. You may use salt, powdered garlic, black pepper, or onion powder as per your taste.

TURNIP/RADISH(DAIKON):

  • Potatoes have high carb content, so turnip/radish can replace them, as they have very low carb content. If you want to have the light flavor, then go for daikon radish; otherwise, use turnip for a light spicy flavor.

EGGS:

  • Use eggs that have a normal surrounding temperature & well beaten. They will hold up the mixture well.

PARMESAN CHEESE(GRATED):

  • We advise you to purchase Parmesan cheese block (fresh) & shred it by yourself at home. If not possible, you may use the pre-shredded version as well. Parmesan cheese will add a crisp, salty, & umami punch to the recipe.

FLOUR(KETO):

  • You may use the flour of almond/coconut to keep our dish ketogenic. They will provide structure to your dish by absorbing the moisture.

INSTRUCTIONS:

  1. Switch the oven on & set its temperature to 400 degrees F.
  2. Grab a muffin tin & coat it with a thin layer of oil.
  3. Now, place the skillet on the flame.
  4. Include the sausage in it & let it cook properly.
  5. Strain its oil & keep it on the side of your working shelf.
  6. Now take radish/turnip as per your choice.
  7. Start grating it using the grater.
  8. After that, wrap the grated turnip/radish in a cheesecloth/paper towel.
  9. Press to remove the excess water very well.
  10. Now, place a bowl(large) on your working bench.
  11. Include powdered garlic, onion, & pepper, turnip/radish(grated), keto flour(almond/coconut), sausage(cooked), eggs and cheese in the bowl.
  12. Grab a spatula & mix all the items well till they combine in a proper way.
  13. Transfer the mixture into each muffin cup using a spoon.
  14. Press with that spoon to have a solid structure.
  15. Shift them to the oven(already heated) for around 20/25 minutes.
  16. Watch them from the glass & remove them from the oven till they get a golden crisp.
  17. Don’t remove them from their tins before six minutes.
  18. Garnish them using your choice of herb if you want.

TIPS:

  • These bites are simple in flavor but you may include paprika, Italian seasoning, or cayenne pepper for a spicy kick.
  • If you want these bites to be extra crispy, give them a couple of minutes near the flame of the oven once they baked.

STORAGE INFORMATION:

FRIDGE:

  • Pack them in a container(air-tight). You may enjoy them for 5 days while keeping them packed in the fridge.

FREEZER:

  • Place them on a baking sheet individually. Shift the baking sheet to the freezerMove the bites to a bag( freezer-safe) after they have frozen. This is how you can enjoy them for fifty/sixty days.

REHEATING:

  • Use an air fryer/oven to reheat these bites. If you want to reheat the frozen ones, just directly place them in the oven(preheated) for some extra time.
