INGREDIENTS:

  • Bone-in chicken thighs – 4 pieces

INGREDIENT NOTES:

CHICKEN:

  • Use the chicken with bone so the dish will be more flavorful and juicy. We can also use the chicken with skin to enhance the flavor further. Drumsticks also serve as a great alternative in this dish, just alter the time for cooking.

OLIVE OIL:

  • Olive oil sears the chicken and provides the extra fat content and indulgence in the dish. Use the extra virgin version for more flavors.

GARLIC & ONIONS:

  • Use the garlic & onions to form the foundation of the flavors of the sauce. We have to make thin slices of onions, so they get soft easily. Onions provide the deep taste while garlic adds the pleasant aroma.

MUSHROOMS & BELL PEPPER:

  • Add the mushrooms and bell pepper to the dish. Bell pepper adds a slight sweet taste, & mushroom adds umami taste. They also provide the colors in the dish.

TOMATO PASTE & CRUSH:

  • Include the tomato paste and its crushed form, which doesn’t contain any extra sugar. Tomato paste will enhance the taste. Use the fire-roasted tomatoes instead to enrich the indulgence.

INSTRUCTIONS:

  1. We warm the oven to 190° C.
  2. Then we apply the oil slightly to the tray.
  3. Now we season the chicken lightly with black pepper & salt on all sides.
  4. Then warm the olive oil in skillet on a moderate flame.
  5. Sear the chicken for 3-4 minutes on all sides till it gets slightly golden.
  6. Then we put the chicken on the tray.
  7. Include the onions in the same pan and cook them for 2-3 minutes till soft.
  8. Then we add the mushrooms, bell pepper, and garlic & cook for more 3 minutes.
  9. Mix the tomato crush, olives, oregano, chicken broth, basil leaves, tomato paste, & chili flakes, and cook lightly for three to five minutes.
  10. Add the sauce uniformly to the chicken in the tray.
  11. Cover the tray loosely with the foil and bake for thirty minutes.
  12. Eliminate the foil and bake for an extra fifteen to twenty minutes till the sauce thickens.
  13. Garnish the dish with parsley and serve.
