Ingredients:

  • Vanilla extract: 1 tsp.
  • Coconut flour: 3 tbsp.
  • Unsalted butter: 3 tbsp.
  • Baking powder: 1/2 tsp.

    Filling:

  • Cinnamon.

Instructions:

  1. Set the microwave temperature to 350.
  2. Place all the ingredients for the keto pie crust in a food processor bowl and pulse before the mixture resembles coarse crumbs.
  3. All the pie crust ingredients, aside from the butter and vanilla, are in a bowl if you don’t have a food processor.
  4. Toss to blend.
  5. Next, mix the butter into the mixture, and then grind it.
  6. Add the crust to the pie, and then brush it with butter.
  7. Apply pressure to the bottom and the edges.
  8. Warm the furnace to 350 degrees.
  9. Bake the pie crust for approximately nine to ten minutes, up to when the crust begins to brown.
  10. Transfer half a cup of thick whipping cream into a compact bowl.

  12. Beat together two cups of heavy whipping cream, coconut milk, monk fruit sweetener, egg yolks, and salt in a small saucepan.

  14. Avoid overcooking it, since it may cause the yolks to curdle.
  15. Heat the mixture just long and then put it out from the microwave.
  16. In the saucepan, whisk together the gelatin mixture, butter, banana, and vanilla flavoring.
  17. Over the chilled crust, pour.
  18. Chill for a minimum of five hours or till solidified.
  19. Prepare the frosting ahead of time.
  20. Fill a medium bowl with one cup of heavy whipping cream. Till firm peaks develop, beat.
  21. Put banana pie’s whipped topping on top.
