INSTRUCTIONS:

  1. Heat the empty oven to 350 F.
  2. Pick the muffin tray with 12 muffin molds.
  3. Apply oil to the bottom & sides of all these molds.
  4. Place a vessel(big) on your working shelf.
  5. Gather all the items.
  6. Now, include the cheese(cream) in that vessel.
  7. Plug the electric mixer (hands) into the socket.
  8. Beat the cream cheese (softened) till it gets the creamy texture.
  9. Then, include eggs, sweetener, essence of vanilla, & xanthan gum.

  17. The muffins should then be taken off the tray after the rest of 15/17 mins & placed on the cooling rack.
  18. Shift them in the fridge once, they come to normal temperature.

TIPS:

  • Use properly softened cream cheese which is at moderate temperature. It won’t combine well if you use cream cheese(cold) and muffins get a hard consistency.
  • If you are using frozen blueberries, melt them first & then include them in the batter. If you put frozen directly better will get the purple color.
  • Let the muffins cool completely before putting it out, because I will crumble if you try to get hot muffins out.
  • Chill them before serving to get the best flavor.

VARIATION:
