Keto Caramel Syrup

Keto Caramel Syrup goes well with many dishes. It spikes the taste of breakfasts, cookies, shakes, ice cream, etc. It gets ready in a few minutes. You may store it for several months. Only the caramelization of allulose resembles regular sugar. Other keto sweeteners wouldn’t work here in this recipe.
This is very rare that you get the keto version of caramel sauce at the store. That’s why we have provided the recipe for a healthy & homemade keto version of caramel sauce. It does not have any chemicals for preservation. Keto Caramel Syrup only has 91 kcal & no net carbs in a serving.

EQUIPMENT:

  • A saucepan.
  • 1 glass jar to store.

INGREDIENTS:

  • Allulose, 140 g.
  • 450 grams of Thick cream.
  • Cubed butter, 5 tbsp.
  • A tablespoon of the vanilla essence.

INGREDIENTS NOTES:

SWEETENER:
It is the chief component that we use to make the sauce of caramel. Only allulose will caramelize. Monk fruit sweetener, erythritol, and xylitol crystallize but do not caramelize.

BUTTER:
Use butter with salt. Otherwise, you should include a little bit of salt as it spikes the flavor.

CREAM:
Don’t use thin cream. Thick or heavy cream will work best for the syrup.

VANILLA ESSENCE:
It gives our sauce the best vanilla flavor.

INSTRUCTIONS:

  1. Add the keto sweetener, and butter in a saucepan.
  2. Place that saucepan on low flame.
  3. Wait for both of them to melt.
  4. Simmer while stirring with intervals till you get the beautiful golden color.
  5. Be careful that it does not burn.
  6. At this point, add the cream.
  7. Wait for the sauce to boil.
  8. Cook on low flame till you achieve the proper caramel color.
  9. Your sauce is ready when it gets the color & thickness you want.

TIPS:

If you feel that your caramel syrup is too thick, the reason might be the butter. Warm it up in the microwave for a little to melt the butter. This will correct the consistency.

Keep the sauce a little thin so it achieves the required consistency upon cooling.

If you cook the sauce on high flame, the oil might split. So cook on the lowest flame and stir in a continuous manner, it will also prevent burning.

In case the oil separates from the sauce, you have to blend it to get it together.

 

STORAGE INFORMATION:

FREEZER:
Store the sauce in the resealable jar & you may keep it for half a year.

FRIDGE:
Use the fridge to keep the syrup for many weeks in a glass jar that you can reseal when used.

REHEATING:
The caramel syrup contains butter. That’s why it starts to solidify in the refrigerator. First, defrost the syrup in the fridge. After that heat it in a gentle manner on low heat.

FAQs:

May we use any other sweetener if we don’t have allulose?
Allulose will caramelize in the best way. Erythritol will crystallize back on cooling. Xylitol is thicker and will be best for making condensed milk.

How do we use the caramel sauce?
There are various uses of caramel sauce;

  • We use this syrup to dip our keto cookies and fruits.
  • Every keto ice cream goes well with the caramel syrup.
