Ingredients:
- Garlic sauce: 1 tbsp.
- Salt.
- Short ribs: 4 pounds.
- Chicken broth: 3 cups.

Instructions:
- Salt the short ribs well on all sides.
- To enable the salt to seep into the thin ribs, let them sit for at least thirty minutes.
- Set the microwave temperature to 325.
- Fill a large Dutch with your preferred cooking fat (lard, tallow, duck fat), and place over medium-high heat to heat through.
- Working in batches, add the three to four short ribs and sear them for one to two minutes on each side, till a golden brown crust forms.
- To avoid the steaming effect that might happen if they are too close together, make sure to work in batches.
- While keeping the meat wet and flavorful, steaming the short ribs will help them produce a lovely crust.
- Return the short ribs to the Dutch microwave and, if you desire, drizzle with garlic sauce.
- Add the chicken bone-in broth and heat it til it boils.
- Switch off the heat and bake at 325 degrees Celsius for 1.5 to 2 hours, till the ribbed flesh is soft and translucent away from the bone.
