The region of the ribs that is a little closer to the cow’s belly is where beef short ribs originate. They are delicious, every one keto and carnivore diet approved, and tend to have a high-fat content. Short ribs include a lot of intramuscular fat, which serves as an insulator to keep the meats from overcooking.

Ingredients:

  • Garlic sauce: 1 tbsp.
  • Salt.
  • Short ribs: 4 pounds.
  • Chicken broth: 3 cups.

Instructions:

  1. Salt the short ribs well on all sides.
  2. To enable the salt to seep into the thin ribs, let them sit for at least thirty minutes.
  3. Set the microwave temperature to 325.
  4. Fill a large Dutch with your preferred cooking fat (lard, tallow, duck fat), and place over medium-high heat to heat through.
  5. Working in batches, add the three to four short ribs and sear them for one to two minutes on each side, till a golden brown crust forms.
  6. To avoid the steaming effect that might happen if they are too close together, make sure to work in batches.
  7. While keeping the meat wet and flavorful, steaming the short ribs will help them produce a lovely crust.
  8. Return the short ribs to the Dutch microwave and, if you desire, drizzle with garlic sauce.
  9. Add the chicken bone-in broth and heat it til it boils.
  10. Switch off the heat and bake at 325 degrees Celsius for 1.5 to 2 hours, till the ribbed flesh is soft and translucent away from the bone.

Notes:

Two ribs from this portion and two ribs from the bottom section are often included, according to most butchers. Lower-cut ribs have very little flesh and aren’t worth cooking because there isn’t much meat at all.
