  • 1 lb. ground beef
  • 1 large egg
  • 1/3 cup almond flour
  • ½ cup Parmesan cheese
  • One tsp. garlic seasoning
  • ½ tsp. salt

  • ¼ teaspoon black pepper
  • One tbsp. parsley
  • 4 oz. cheddar cheese

INGREDIENTS NOTES:

BEEF:

  • We have to choose an 80/20 blend of ground beef for luscious meatballs. Their increased fat content keeps the meatballs tasty & soft. We can also use ground chicken or turkey, but keep in mind that they might be drier than the beef, so you might want to add extra fat, like olive oil.

SHARP CHEDDAR CHEESE:

  • We can use sharp cheddar for a strong taste; we can also use the mozzarella for a soft flavor, or pepper jack to make the spicy meatballs. We have to cut the cube into tiny pieces to guarantee that the cheese melts flawlessly into the meatballs.

ALMOND FLOUR:

  • This flour has low carb content and it is also keto substitute for breadcrumbs. It keeps the meal low-carb while binding the meatball mixture together. Coconut flour can be used in its place, but use less of it because it absorbs more moisture.

INSTRUCTION:

  1. Turn the oven on to 400°F.
  2. Put parchment paper on a baking pan.
  3. Take a big vessel and add the ground beef, onion seasoning, egg, Parmesan, almond flour, garlic seasoning, salt, paprika, black pepper, & parsley.
  4. Mix everything with the spatula and hands.
