Keto Chicken Meatloaf Cups

The simplest Low Carb Dinner I’ve ever made is these Keto Chicken Meatloaf Cups! Do you wish to add more flavor? Bacon-wrap them up!

This recipe was contributed by my incredibly skilled and attractive husband, Joe.

He wanted to attempt blogging because he’s got the bug and might be responsible for some more postings once the new baby is here. Let him know what you think, but refrain from giving him a head start.

How To Make

Set the oven to 350°F.
Mix onion, mozzarella, spinach, parmesan, egg, and ground chicken in a bowl(large).
Use a silicon muffin pan or nonstick spray to coat a large muffin pan.
The mixture should be placed halfway up each cup.
All sauce ingredients, combine in a bowl(medium).
The meatloaf cups should have some sauce left over for dishing.
Prepare cups for 45–50 minutes, or until thoroughly heated.
Serve hot, topped with the leftover sauce.

I’ve always considered meatloaf to be one of my top favourite foods.

Many people cringe when they think of this dish, but I recall telling the school nurse about my favourite dish when I was eight years old: my mom’s meatloaf.

I’ve only recently tried preparing meatloaf in a muffin pan, but I’m already addicted! The only warning I would add is that these meatloaves are addictive, so limit how much you eat. This is the simplest meatloaf I’ve ever cooked.

Sukrin Gold is a key ingredient in this dish in addition to the ground chicken. Sam has used it in the past, for example, in her Crack Green Beans for Thanksgiving.
