To cut down on carbs, I substituted almond flour for wheat flour. I’ve also used hazelnut flour in this recipe, but pecan flour would also work well! Without using starches, a small amount of xanthan gum or glucomannan thickens the sauce. This Keto Chicken Piccata tastes amazing, especially when served with cauliflower rice or grilled zucchini. It only contains 6g of carbs, 2g of fiber, 4g of net carbs, and 26g of protein in it.

NUT FLOUR:
- This dish was first made with hazelnut meal, which I adore for its taste. However, pecan or almond flour works equally well.
PARMESAN:
- Finely grated parmesan contributes to the chicken’s beautiful golden crust.
CHICKEN:
- Because they are smaller, chicken tenders are ideal for Keto Piccata. You don’t need to pound them flat or chop them. However, chicken breasts can also be used, sliced into smaller pieces.
LEMON SLICES:
- Fresh lemon slices and lemon juice are required.
EGG WHITES:
- This serves as the adhesive and binder that keeps the nut meal attached to the chicken.
BUTTER:
- Butter is essential since piccata has a fantastic lemon-butter sauce.
GARLIC & SHALLOT:
- Garlic and shallot, two minced savory ingredients, give the sauce depth.
CAPERS:
- Another essential component of the piccata dish is these little balls of delicious capers. Use drained capers in brine. If you don’t like capers, you may omit them or substitute olives.

INSTRUCTION:
- Beat the egg white in a small vessel till it gets foams.
- Mix the Parmesan, garlic powder, salt, pepper, and nut flour in a separate shallow basin.
- Dry the chicken tenders by patting.
- Each is dipped in the nut flour mixture after being dipped in the egg white.
- Put it on the wax paper-coated plate.
- In a pan over moderate heat, combine 1 ½ tablespoon olive oil and ½ tablespoon butter.
- Add half the tenders and heat for three minutes on each side, or till it gets a nice golden brown color.
- Repeat with the remaining chicken tenders, half a tbsp. of butter, and another 1½ tsp. of oil after removing to a platter.
- Cook the shallots & garlic in the pan for around thirty seconds, or till nice fragrance came.
- Bring to a boil after adding the lemon slices and broth.
- Cook the dish for another seven minutes or more or till it gets a thick consistency and is reduced by half.
- After including the capers and lemon juice, add the left behind three fragments of butter.
- Mix till they get smooth and melted.
- Whisk in ¼ teaspoon xanthan gum or glucomannan for a thicker sauce.
- Add salt and pepper for seasoning.
- Serve the chicken over cauliflower rice or lightly steamed zucchini noodles.
- Put the sauce with the spoon on the chicken before you serve.
TIPS:
- Between batches of chicken, wipe clean the pan since any leftover nut flour may burn when the chicken cooks again. As required, add more oil in between batches.
- To make two thinner cutlets, take the cutting board and put the chicken breast on the borad and slice it in half horizontally. Next, cut the cutlets into strips or leave them whole.
- Try substituting 1 tbsp. of grated onion in place of the shallot.
- To prevent the chicken from becoming overly soggy, store the remaining chicken tenders and sauce separately.
