This Keto Cinnamon Tea Cake is very airy, light, spongy, & delicious. It is perfect to pair with keto-friendly tea/coffee in the beautiful evening. We have used almond flour and swerve sweetener in place of regular flour or sugar to make the cake keto-friendly. We can easily make this Keto Cinnamon Tea Cake in advance and store it in the air-tight box for around two to three days on the counter or for around one week in the fridge & we can also freeze this cake. This Cinnamon Tea Cake only contains 3.5g of carbs, 5g of proteins, 2g of fiber, & 1.5g of carbs/serving.

INGREDIENTS:

TO MAKE THE CAKE:

  • 3.5 ounces softened unsalted butter
  • ¼ cup swerve
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 & ¼ cup almond flour
  • 1 teaspoon baking powder
  • ¼ cup unsweetened almond milk

  • 2 tablespoons melted unsalted butter
  • 1 tablespoon swerves
  • 1 teaspoon cinnamon

INSTRUCTION:

TO MAKE THE CAKE:

  • Preheat the oven to one-seventy degrees C or three-forty degrees F.
  • Take the round baking tin put the parchment paper on the tin and applies the oil on the parchment paper.
  • Grab a small mixing bowl adds the butter swerve in the bowl and beat it on moderate speed till it gets smooth and creamy.
  • Add the two eggs one by one and beat them with the butter and sweetener till they get smooth.
  • Then add the vanilla essence, almond milk, unsalted butter, baking powder, and almond flour in the bowl.
  • Beat them till they get properly combined and form a smooth and lump-free batter.
  • Carefully transfer the batter to the round tin pan and bake the cinnamon cake for 20 – 25 minutes or till the cake gets a nicely lightly brown color.
  • When it is done put the cake in the corner for ten minutes to get chill.
  • Transfer the cake to the rack and make the cinnamon mixture.

CREATE THE CINNAMON TOPPING:

  • Take a small bowl and add swerve & cinnamon in the bowl and mix them properly.
  • Take a brush and brush the melted butter on the cake then dust the cinnamon mixture on the cake.
    Serve the warm cake.

TIPS:

  • We should use all the components that are at ambient temperature to get a even and fluffy cake.
  • Does not over-mix the batter of the cake after including the dry ingredients just properly mix to remove any lumps. The cake will get dense when it is cooled down if we over-mix the cake.
  • If the batter appears to be thick after mixing the almond flour then we can add a little amount of almond milk in the batter to make it thin. But be careful because if the batter gets too thin it will change the texture of the cake.
