Keto Croissant with Chocolate Filling

A Keto Croissant with Chocolate filling is a great dish. You may use it as a snack, breakfast, or dessert. We have used sugar-free chocolate as a filling. We use low-carb flour and melted cheese for making dough. This makes our croissant perfect for the keto diet. If you don’t like chocolate at all then you may keep the croissants plain. For this, you have to follow the whole recipe by only skipping the chocolate hazelnut spread. You may also add other fillings like white chocolate or strawberry jam. It is a healthy and fulfilling snack that only contains 2.8 g of net carbs in a serving.

EQUIPMENT:

 

  • An oven
  • 1 baking sheet
  • A mixing bowl

INGREDIENTS:

CROISSANT DOUGH:

  • A teaspoon of Inulin powder.
  • Almond flour, 6 tbsp.
  • One-half cup of grated mozzarella cheese.
  • Six tablespoons of lupin flour.
  • 1 egg, large.
  • Oat fiber, 2 tbsp.
  • A packet of instant yeast.

  • Sweetener, 2 tablespoons.

ASSEMBLY:

  • Half a tablespoon of melted butter, unsalted.

FILLING

  • Chocolate hazelnut spread, 3 tbsp.

INGREDIENT NOTES:

INULIN POWDER:
Yeast requires sugar to get activated which they consume so we don’t have to worry about carbs. Here we use the inulin powder for its activation.

ALMOND FLOUR:
We make almond flour by making the powder of almonds to use in place of wheat flour in keto recipes.

MOZZARELLA CHEESE:
We recommend you shred the fresh cheese by yourself. Otherwise, buy the shredded one for your ease.

LUPIN FLOUR:
It is a very fine powder of a keto legume. Lupin flour helps to improve the texture of these croissants.

EGG:
Grab a large egg that should not be too small or too large.

OAT FIBER:
It is a lower-carb fiber that we add to improve the texture.

YEAST:
Don’t use active dry yeast as the method for that yeast would be different. Look for fresh instant yeast for improved results.

BAKING POWDER:
Use fresh baking powder that is not exposed to the air so that your croissants rise well.

INSTRUCTIONS:

PREPARATIONS:

  1. Take a piece of plastic wrap.
  2. Make a line of six inches from hazelnut chocolate spread.
  3. Wrap it and twist it from both ends to seal.
  4. Freeze it for a least an hour.
  5. Take a sheet used for baking.
  6. Cover it with a sheet of parchment.
  7. Switch the oven on and warm it up to 190 degrees C.

DOUGH MAKING:

  1. Grab a big bowl.
  2. Add all dry ingredients.
  3. Mix well.
  4. At this point, Include an egg in the bowl of dry items.
  5. Use a double-boiler to melt the grated mozzarella until you get the smooth liquid.
  6. Now transfer this melted cheese to the dry mix and knead with your hands.
  7. Your dough is ready

CROISSANT MAKING:

  1. Apply oil to two sheets of parchment.
  2. Place the ball of dough between these sheets of parchment.
  3. Roll the dough.
  4. It should be 1/8th inch thick from all the sides.
  5. Grab the pizza cutter or knife to cut the three rectangles.
  6. Then make two triangles out of a rectangle to make 6 triangles in total.
  7. Take the frozen chocolate and cut it into six pieces.
  8. It works so fast that frozen chocolate spread doesn’t melt.
  9. Arrange a piece of frozen spread on the broad end of the dough cut in a triangle shape.
  10. Roll the dough to make the croissant.
  11. Seal the edges so that the chocolate spread doesn’t get out on melting.
  12. Place the croissants on the baking sheet such that they should be 5 cm apart from each other.
  13. Apply the melted butter using the brush.
  14. Place the sheet in the already-heated oven till the croissants become golden.

STORAGE INFORMATION:

FREEZER:
Use the freezer to freeze the ready croissants and defrost them before serving. Warm them a little bit if you wish
FRIDGE:
Use the fridge to store the wrapped dough. Leave the chocolate spread frozen in the freezer.
When you want to serve.
Put the dough in the working place. Roll it, cut the triangles, place a piece of frozen spread, roll it up, and bake. Finally serve them warm.
