Ingredients:

  • Baking powder: 1 tablespoon.
  • Cream cheese: 1 oz.
  • Olive oil: 1 tbsp.
  • Shredded mozzarella: 1/2 cup.

Instructions:

  1. Set microwave temperature to 350 °F.
  2. Grease an 8-inch square baking dish from the bottom up with olive oil.
  3. Place a square of parchment paper on it and mist the paper.
  4. Transfer mozzarella to a medium bowl that is safe to microwave.
  5. Place the chunks of cream cheese on top.
  6. After stirring, microwave it for an additional 40 seconds.
  7. Add the egg, after giving it one more stir.
  8. Using a rubber spatula, stir, then use your hands to knead.
  9. Knead fast, ensuring the dough is entirely consistent, and knead it properly before it cools.
  10. Push the cookie mixture into the pan to fill it.
  11. With slightly greased palms, this is simpler to do.
  12. Press the fingertips into the dough.
  13. Gently press the rosemary leaves into the dough by scattering them over the loaf.
  14. Add a little coarse salt to the bread.
  15. Mist a generous amount of olive oil over the top of the bread.
  16. For 15 to 17 minutes, once puffed and golden brown, bake the focaccia.
  17. Cut it into nine equal parts while still in the pan onto a rack to cool down, then serve.

No, you cannot use the cheddar in this recipe. You can only add the shredded skim mozzarella.
